NobleSquirrel (3439) - Chicago, Illinois, USA - FEB 21, 2013
Deep gold, still, excellent clarity. Nose is oxidized. Restrained sugar and florals, pretty white wine like overall. Lacks much distinct character. On tasting, some sherry-like and papery oxidation. White wine notes, acidity and on the dry end of the spectrum. Could be okay but apparently a lot of batch variation on this one. The maple is completely lost.

750ml bottle purchased from the source... Pours with extreme clarity, golden in nature, white-wine like and fairly pale. Semi-leggy but not as full as other meads especially the dessert-like ones... Aroma is a modicum of cider, mild honey notes, a touch floral and minty even. Light in nature... Flavors are a continuation of the same with mild natured honey and apple notes. Hints of floral qualities and more semi-tart apples prominet throughout. A slight bitter fruit rind finish. Sweetness level was moderate but fairly subdued even with the added maple which seemed to be fairly non-existent. Body is just shy of medium, not full to any extent. Tasty but lacking the maple that was expected.

Bottle: Pours a clear still pale champagne golden with good viscous legs. Has a sweet white grape and floral honey nose without much noticeable maple character. Starts with a rich sticky sweet honey flavor and complex vinous chardonnay grape character before a slightly warming semi-sweet finish. A well-balanced, complex, and drinkable brew.

75cl bottle, thanks CaptainCougar. Clear, still pear juice. Aroma is moderately sweet, pear, some honey. Taste is moderately sweet, pear, some honey, apple. Medium body.

Bottle shared by CaptainCougar. Pours clear very pale yellow with no head. Aroma is honey, fruity, and straw. Flavor is lightly tart fruit, honey, and caramelized butter. Medium body and warmth with a sweet finish.

Bottle. Pour was deep golden with sweet honey and light maple aromas. The blend of maple syrup was nice and subtle. The sweet honey and spice still prevailed and was nice.

Small sample at OSLO and Guerde’s tasting on Friday, 5-23-08. Yellow color. Nice, fruity, honeyish aroma. I definitely tasted the maple and really enjoyed this mead.

OSLO and Guerde’s Memorial Weekend Tasting, 5/23/08. Another big thanks to Skyview for helping me kill off all of White Winter’s meads! Light yellow color. Very faint honey aroma with some woodiness. I was wondering if there really was any maple syrup in this, until I tasted it. Strong maple flavor. Very sweet, almost cloying. A bit of clover honey. Nicely done.

Bright still straw colored liquid. No legs. Light apple and honeysuckle with a touch of boiled pasta in the aroma. Very simple aromas with nothing very inviting or bold. Light and smooth on the palate. Sweet apple honey with a touch of maple sap, complete with a touch of wood. Simple sweet elixir. A decent dessert mead.
