COMMERCIAL DESCRIPTION
This ale is our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

Updated: Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months.

Draft at Craft Brewed Wicked Weed event. Pours a clearish gold witih a small bit of white foam. Lemon, tropical Brett nose....passion fruit aroma. Tart on the palate, creamy, some oak. Tart, really nice tart notes. Young Strawberry on the finish. Quite well done.

Bottle from Brewdog bought online. Pours clear golden, with a loose white head that disappeared. Aromas of white wine, peach skin, fruity, light funk. Taste is sour, acidic, floral, white wine, oak. Big dry winey tart finish. Light bodied, gentle carbonation. Enjoyed it, decent rather than awesome.

Bottle: Thanks Andrew: Served in a Chouffe glass. Light and thin white head/lacing that disappears quick. Hazy yellow body. Nose is fruity, expected a little bit more fruit, but it’s mixed very well with the funkyness almost dominating shortly followed by the fruit. Flavour is balanced tart with some funk/wild bacterias and more fruityness. Even little earthy and crispy wood tones seem to suface gently. Aftertaste is earthy fruit tones with light funky and wild yeast tones. Low to medium carbo, tart mouthfeel, good medium bodied! Maybe not the most exciting beer but it finds it’s balance and it’s refreshing. Good example of American sour!

Yellow with a thin head. Aroma is vinnegar, boozy cherries and lactic acid. Initial sip made me shake my face at the sourness but I fast adapted. Oaky, pineapple and salty. Didn’t get any of the other fruits but I did enjoy this.

On tap at Hops & Pie. Pale golden and slight hazy appearance. Aroma of tropical fruit, sour funk, light zesty hops, earthy yeast and light vinous notes. Similar flavor, tart, fruity and mildly sour with a lingering, light dry finish hinting at toasted oak. Light to medium body with a refreshing finish. Nice.

500ml from the Funkatorium. Pale yellow. Lots of sour citrius fruit in the aroma. Orange, mango, pineapple. Taste is fruit with medium funk and stron acidity to the flavor. Solid as always from the funkatorium.
