COMMERCIAL DESCRIPTION
This ale is our first venture into barrel aged American wild ales. A blond Saison base similar to that of Saison I, fermented on our proprietary Wicked Wild strain. After fermentation we moved the beer into Petite Verdot Barrels from Rock House Vineyards and added mango, papaya and guava where it sat for 6 months. This ale is tart and tropical with notes of musty hay and citrus. The tartness of this sour is moderate and the dry fruityness makes this beer a great palate cleanser and pairs well with delicate dishes.

Updated: Aged in white wine barrels with 250 lbs per batch of papaya, mango, pineapple and guava. The beer is blended from barrels ranging 5-12 months.

This was my favorite from WW. Pours a hazy bright golden with a big white head. Nose of saison yeast and light tropical fruits, though I wouldnt have suspected real fruit in the brew. Hay and wood and light funk. Taste adds a dry acetic quality and more wood, almost a bit closer to Chardonnay but much drier. Crisp and refreshing. I could drink this all day.

500ml from the Funkatorium. Pale yellow. Lots of sour citrius fruit in the aroma. Orange, mango, pineapple. Taste is fruit with medium funk and stron acidity to the flavor. Solid as always from the funkatorium.

Tap at the Funkatorium: gold pour, thin white head. aroma of floral, wine, citrus. tastes are earthy tart, tropical, woody. crisp and easy.

Tap at Monks, pours lightly hazy golden not much head or lace that sticks around. Tons of grape skin oaks, petit Verdot, guava and dank pineapple citrus. Acidity is balanced well which is the case with most of these wicked weeds. Thats pretty refreshing to see.

Bottle. Pours hazy gold with white head. Nose is champagney yeast, white grapes. funk. Tastes lively on the tongue with notes of white wine, hops, and a very dry palate. Like a dry champagne/wine hybrid.

500ml bottle. Tart aroma of tropical fruits including pineapple, mango and papaya as well as vinous white wine notes. Pours clear golden colored with a nearly non-existent white head that has no retention or lacing. Starts with a mixture of tart and sweetness from the various tropical fruit flavors as well as having a very lively mouthfeel. Finishes a bit tart with nice dry white wine flavor and a bit of oak as well. Nice first sour to try from these guys!

Golden color with a pineapple and citrus aroma. It is sour but not over the top. Some pineapple and white grapes. This is very similar to a dry white wine. Overall good flavors and tame.
