COMMERCIAL DESCRIPTION
A study in blending.

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Keg and 750ml bottles.

Yorker (2053) - Holstebro, DENMARK - NOV 8, 2017
75 cl bottle @ home. Pours dark amber with a white head that leaves some lacing. Aroma and flavour are grapes, berries, wood, and tartness - with a dry finish.

Enticing wine aroma in a black pour. Laid back sour balance with a full fruity body and a woody finish. Pretty much what it says on the bottle.

Really interesting, the barrel ageing has given an extra layer of complexity to this beer, some great yeast aromas

750ml bottle. Pours a reddish-brown colour with a short-lived fizzy off-white foam head. Aroma of citrus rind, funk, woody oak, red wine. Taste is sour, citric, grains, fruity, berries, oaky, wood, red wine, tart, funky and tannic. Slick mouthfeel, medium bodied, fine carbonation, dry sour tannic finish. Very drinkable.

Citrus fruits, lime and lemon tart, acidic, cider, red wine, wood / oak. Clear, dark brown, small, creamy, beige head. Medium sour. Very much continuing the aroma, citrus, acidic flavours, lemon tart, light wood/oak, soft carbonation, sour and dry finish. Decent Sour Ale, was expecting a bit more though. Bottle from Bison Beer, Brighton.

Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture vineuse. Moyenne effervescence en bouche. Légère présence de vinaigre fruité en arrière goût. (Rating #6886)

Small slightly bubbly mediumlasting head. Aroma is sour-ish dry, oak, mild vinegar, minerals, weeds, bark, thinner, sour berries. Taste is sour-ish fruity, mild vinegar, sour berries, oak, minerals, bark, grass, sorrel, butterscotch, spices. Medium bitterness, sour-ish dry mouthfeel. Nice one.

tfredvik (2040) - Oslo, NORWAY - JAN 28, 2016
This one looks a bit dull, it’s mostly dirty brown without the red hue that I find so attractive. The head is small, beige and leaves some lacing. Strong and amazing aroma that is very fruity, lots of fermented and tart red berries. It’s pleasantly funky, with caramel in the back. Strong flavour of balsamic vinegar, fermented red berries, wood and caramel, with leather, cherries and red wine in the back. Moderate sweet taste with a moderate to light sourness. Mid-bodied, dry and fairly softly carbonated. Delicious!
