A study in blending.

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

As this is ’Beyond Modus’ we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Johnsense (1818) - - JAN 21, 2018
Reddish brown pour, fast fading head. Aroma of wine, light yeast, balsamic vinegar, dark berries. Sour taste, oak, sour berries, wine, wood, light red vinegar, yeast. Medium body. Pretty smooth once you get past the initial sourness.

75 cl bottle @ home. Pours dark amber with a white head that leaves some lacing. Aroma and flavour are grapes, berries, wood, and tartness - with a dry finish.

Enticing wine aroma in a black pour. Laid back sour balance with a full fruity body and a woody finish. Pretty much what it says on the bottle.

750ml bottle. Pours a reddish-brown colour with a short-lived fizzy off-white foam head. Aroma of citrus rind, funk, woody oak, red wine. Taste is sour, citric, grains, fruity, berries, oaky, wood, red wine, tart, funky and tannic. Slick mouthfeel, medium bodied, fine carbonation, dry sour tannic finish. Very drinkable.

Citrus fruits, lime and lemon tart, acidic, cider, red wine, wood / oak. Clear, dark brown, small, creamy, beige head. Medium sour. Very much continuing the aroma, citrus, acidic flavours, lemon tart, light wood/oak, soft carbonation, sour and dry finish. Decent Sour Ale, was expecting a bit more though. Apparence: La couleur est ambrée foncée. Présence d’un moyen col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de petits fruits acides avec une pointe de vanille et de raisins rouges. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture vineuse. Moyenne effervescence en bouche. Légère présence de vinaigre fruité en arrière goût. (Rating #6886)
