Brettanomyces fermented IPA

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.

This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

2/3rd pint at Salt Horse in Edinburgh. Surprisingly good for a British IPA, much more like the American style beers. Crisp and hoppy with a slight lemon flavour and a bit of fizz. (K)

October 2017 - 330ml bottle at home in Richmond as 'Wild Beer Evolver IPA', 5.8% picked up in July 2015. Pours a vibrant orange, sparkling with a dense beige head that doesn't endure. Aroma is honeydew melon, soured old grapefruit and old peach slices in syrup. Body is light and frothy with soft carbonation. Taste is dry and minty, floral, also plenty of musty gooseberry, spiced lychee, dusty bitterness with a little dried coconut. The brett hasn't really funked this up much at all, but it is pretty dry. Amazed at how fresh the hop flavours are and how crisp this beer is considering the age. Interesting. From this experience, I'd say that there was never any point in aging it. (7-4-6-3-15=3.5)

Bottle from the brewery. Dry and bubbly, with a nice flavor that comes from the back-and-forth between the fruit and barnyard aromas of the Brett yeast and the citrus aromas from the hops. They might have gone a bit too far, though -- the Brett is a little heavy (which makes it bone dry) and the hops leave a bit too much bitterness at the end. Still, this is great, and very tasty.

Svesse (8803) - Hässelby, SWEDEN - SEP 13, 2017
(Draught at In De Wildeman, Amsterdam, 27 July 2017) Pale amber colour with frothy, white head. Malty, fruity nose with citrus, orange peel, crisp-bread and spicy aromas of brett. Malty, spicy taste with notes of dried apricots, orange peel, brett and a balanced citric bitterness. Medium body, mainly dry. Fresh and tasty, with an interesting brett character. Nice one.

Bryggerifestivalen i Trondheim 4 Aug 17. Gylden gulbrun. Uklar. Filmskum. Litt lacing. Lett fruktaroma. Smaken litt sitronaktig. Blir tørr etter hvert.

Keg 1/3 pint (flight of beers) at Craftsman Company / Excite the Enthusiast Coffee & Ale House, Aberdeen. Golden colour. Grassy aroma, notes of brettanomyces. Flavour of dust, grain and brett. Not a beer I’d buy again.

Draught at Bryggerifestivalen 2017. Shared with Finn. Frothy white head to a misty golden body. Lacing rings down the glass. Farmyard nose, dry. Oily hops, earth, and brett to the taste buds. Resinous bitter hops to the ending. Refreshing. (Trondheim 04.08.2017).
