Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Arme puissant type rouge des Flandre. Pas de mousse. Gout qui tends vers la rouge des Flandre coup leau et un got bois. Bire ok mais trs vite coeurante.

Bottle at The Office. Aroma: Caramel, funk, lactic acid, fruit and huge vinegar. Appearance: Low head, dark amber body. Taste: Awfully sour, lots of vinegar, caramel, malts, fruit, could clean a jammed pipe. Palate: Very astringent throat-burning finish, medium carb, medium-high body.

On tap. Colore rosso sangue fino al marrone. Olfatto balsamico dal vinoso allacetico e fresco di frutta rossa. Carbonazione sottile, da media a molto attiva. Aroma da vinoso a acetico, di frutta rossa (ciliegie, fragole, amarene, lamponi e melograno). Gusto dolce da medio a pieno molto balsamico. Trama vinosa leggera, con corpo da leggero a medio. Un prodotto valido seppure inferiore a suoi contraltari pi blasonati (Grand Cru Rodenbach).

Tasted this at the Six Degrees North, Glasgow on the 25th November 2016. Keg dispense. Opaque mahogany in colour with a thin white head. Malty aroma with sour fruit notes present. Thin mouthfeel and no lacing. Dark malt complex gives a moist fruitloaf base with sweet & sour notes of banana, fig, black grape and pineapple flavours. Could not detect any hop resins present in the aftertaste. Malty finish with oxidised red wine, sour mash notes of banana and fig still present in the mouth. A good attempt at a Flemish Red.

Dark brown with hints of red. Quickly dissipating head. Aromas of malt, funk, bread, caramel, balsamic vinegar and oak. Flavor is most balanced, but the finish is a bit off. Tastes of berries, vinegar, with a malty touch. Far too much wood flavor for me and it quickly dies on the palate. Tastes good, but lacks the depth of flavor I crave in this style. Either way, its a good non-Belgian version of Flemish red.

Bottled (Spontaneous KSMT tasting). Ambery brown colour with a minor head, which vanishes quite quickly. Quite a tight and stinging aroma of sourness, some cherries, mild red berries and some slight winelike notes along with some slight wood. Flavour is tart berries, some sweet malts, mild funky notes as well as some slight yeast, cherries and mild dry madeira like notes.
