Barrel-aged and using a variety of yeasts; a study in patience

Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Aroma of funky and sour notes. Some notes of cherries and funk. A little bitter finish. Not quite what i expected.

33cl bottle from SB. Brown color with beige head. Oak, red berries and lots of red wine in aroma. Some kind of cake/bread spice that i cant recognize atm. Cherry, sugary, very light carbonation. Light body, dry and lightly sweet mouthfeel. Not really feeling this blend, the balance is not right and it balances way too much to the red wine taste (i like red wine though).

330ml bottle from Systembolaget. Slightly hazy, coca cola brown color. Medium size tanned head, good lacing. Tart and vinous aroma, red berries, woody, oak barrels and red wine. Soft, tart and sweet mouthfeel, mild carbonation, medium bodied. Sweet and tart taste not funky at all, red berries, cherry, sugar, caramel, dried dark fruit, vanilla, dry wood and red wine vinegar. Sawdust dry finish with slight alcohol burn. Refreshing and interesting blend!

Vinous, red wine, tart, very fruity, vanilla and caramel, lots of bourbon. Brown/reddish colour, no head. Tart, mid-sweet, Low bitterness, tart, fruity, With notes of red grapes and bourbon. A treat.

Black with large beige head. Aroma is fizzy tablet grapes earth yoghurt. Taste is sour fruits smooth sweet cocoa stracciatella. Incredibly smooth and drinkable. Medium body. Not heavy. I dont like the mix of chocolate and fruit so much. But well done.

Draft at taphouse Munich. Pours black with brown head. Nose is a mixture of stout and fruity wild notes, Joghurt . Palate is fizzy tablet, just a touch of stratiatella and Joghurt. Sour finish. Really smooth, velvety. Reminds me of a Joghurt I had as a child. Good!

330 mL bottle. Pours a deep red with a medium khaki head. Smells of red wine, cherries, caramel malt, oak, and a touch of acetic acid. Tastes of red wine, sweet caramel malt, oak, tart cherries. Oaky and dry in the back end with a slight vinegar sour finish. Medium low carbonation. Pretty heavy and kinda sweet. A heavy and sweet, mildly sour brown ale.
