Barrel-aged and using a variety of yeasts; a study in patience

Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Keg @ The White Horse On Parsons Green. The pours a soupy, murky reddish brown color with a tiny off-white head. The nose is salted dark chocolate, tangy red berry, balsamic, some wood. The taste is more tangy red berry jam. Slightly tannic, more balsamic. Slight hints of brett and buggy wood. These funky flavors are supported by a fat malty body. Notes of chocolate, charred grain, ash and leather. Dry woody finish. Easy to drink, this beer wears the ABV well. Overall, really nice effort. Thought-provoking stuff. Im looking forward to trying more Wild beers!

Funky tart aroma in a deep red brown pour. Similarly complex flavour profile with sweet malt, tart berries and funky wood - all with the subtlety of the Belgian masters. One of my favourite beers of the style.

Dark brown colour. Aroma of wild yeast, cherry, port wine, some tart and strawberry. Taste of a mix of sour and sweet berries, tart, cherry, some yeast. Well balanced!

Keg at Casc. Pours deep dark browny ruby red. Aroma reveals plenty tannins, aniseed, red winey-ness and toffee chew sweetness. More tannins in the taste with soft apple, lively sweet n sour fruits. Finished with a gentle pepper earthiness. Body is soft and smooth with the gentlest prickle of a sparkle. Theres fresh sweet fruit tannins, toffee sweetness and dark fruit sourness. Theres absolutely heaps going on in this wonderful ale. Superbly different.

Flaska frn SB. Mrk rdbrun med liten beige skumkrona. Syrliga toner som drar t kolaremmar, krsbr och kandisocker. Stora ektoner och tanniner tillsammans med rdvin. Den liksom luktar snustorr och stram. Ngot strre kropp. Inte alls s torr som frvntat, snarare lite oljig. Smaken drar t rdvinsvinger och krsbr. Lite ek. ven en del alkohol som vrmer p jmte lite bittra toner och en snll beska. Helhetsintrycket drar mycket t ett lite eldigare rdvin. Trevlig!

UPDATED: APR 30, 2017 Very oakey and distinct malt vinegar. Winey dryness coupled with malt vinegar. Sour beers arent my goto style and some of the better examples IMO blend the sour characteristics to balance it out. For me this novel but way too acidic to be enjoyable

Dark red/brown colour. Small head. Souris, vinous aroma with notes of dark currants and cherries. Smooth and rounded mouth feel. Sourish taste with notes of cherries, currants and oak casks.

33cl bottle from SB. Brown color with beige head. Oak, red berries and lots of red wine in aroma. Some kind of cake/bread spice that i cant recognize atm. Cherry, sugary, very light carbonation. Light body, dry and lightly sweet mouthfeel. Not really feeling this blend, the balance is not right and it balances way too much to the red wine taste (i like red wine though).
