Barrel-aged and using a variety of yeasts; a study in patience

Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Keg @ The White Horse On Parsons Green. The pour’s a soupy, murky reddish brown color with a tiny off-white head. The nose is salted dark chocolate, tangy red berry, balsamic, some wood. The taste is more tangy red berry jam. Slightly tannic, more balsamic. Slight hints of brett and buggy wood. These funky flavors are supported by a fat malty body. Notes of chocolate, charred grain, ash and leather. Dry woody finish. Easy to drink, this beer wears the ABV well. Overall, really nice effort. Thought-provoking stuff. I’m looking forward to trying more Wild beers!

Rhombic (181) - Elx, SPAIN - MAR 8, 2018
Draught at Pivní. Pours dark brown with a thin crema-like tan head. Good lacing. Aromas are vinous and with presence of oak, very recognisable. The flavours of this sour are rather citrusy but in the acidic, fresh juice-like quality to oranges. Strawberry is quite intense but balanced in an admittedly well blended way. Palate is mostly watery, shortish finish, no hops, good body though. It is OK but there are a few aspects that I deem improvable.

Barwa brunatna, piana beżowa. Aromat intensywny, ciemne owoce, melasa, nuty octowe. W smaku wytrawne, mocno taninowe i kwaśny (cytryna i ocet). Czerwone owoce, suszo owocowy, melasa, posmak drewna, finisz cierpki.

0.1 from tap at Mel's: Dark brown, light reddish color, off-white head. Aroma is tart, sourly-fruity, some vinegar, sourly-fruity dark berries, wood. Flavor with acid and vinegar, berries, chocolate, barrels, plums. Nice stuff.

UPDATED: JAN 20, 2018 0.33 bottle C: muddy, brown-reddish N: sour, balsamic vinegar, apple vinegar, syrah, pinot noir, charred oak, cranberries P: starts off sour, heavy burgundy type wine influence, dark chocolate, sour red berries, raspberries, oak towards the finish. Overall a complex nose and palate, astonishing!

Pours dark with light carbonation and dissipation in the head. Strong Burgendy opener quickly settling to berries and raisins in dark choculate on the palette. Brilliantly complex and drinkable, rewarding.

Wild Beer Co. hat mal wieder zugeschlagen - sicher nicht das absolut abgefahrenste Sour-Brett, aber dafür umso trinbarer. Ein dunkles Sauerbier in ner Red-Version mit einer Variation an unterschiedlichen, wilden Hefen und dann noch im Burgunder Holzfass gereift - wie geil is das!?!?!. Würde am liebsten eine fette Ente dazu essen - mit ordentlich Rotkraut und an gscheidn Knödl. Hat zwar NULL Schaum, aber dafür eine tolle, rote Fruchtigkeit mit schön anhaltendem Abgang. Klares Brett-Aroma (Bretanomyces), fährt aber nicht über das fruchtig, saure Bouquet drüber - flanderig mit feiner, saurer Kirsche. It's funky fun at all!

Bottle. Loose off white head. No retention. Reddish brown body. Nose is sour, Brett, nail varnish, boiled vegetables, oak, sour cherries, red fruit and bubblegum. "Funky". Taste is sour with a sour finish. Watery palate.

Bottled. Thanks VIšnja! Missed it when it was on tap at Pivoteka, glad I got to try it. Murky dark red body, medium sized off white head. Soft red wine barrel aroma, light cherries. Nice and soft. Soft taste, cherry and glue, light sourness. Interesting enough, while not a world beater, definitely a classy Flandersoid red.
