Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.

Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.

A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Draft. A hazy deep red beer with a tan head. The aroma has notes of malt, caramel, and acetone. The flavor is acidic with notes of acetone, malt, fruits, and cherries, leading to a tart finish.

Draught at Taphouse. Hazy ruby coloured with a small off-white head. Light acidic aroma of caramel and yogurt. Light acidic flavour of caramel, red wine, yogurt and vinegar. Tart finish.

330ml bottle @ the office. Pours a murky medium brown with thin white head. Nose is balsamic and some fruity notes. Flavour is very lightly sweet while more so vinegar character. It is sharp and acidic. I got the bottom of the bottle and there’s quite the sediment there.

Medium brown. Not much head. The aroma and flavour both have a lot of oak, quite a bit of vinegar, and some dark fruits. A nice example of the style, actually.

Colour between red and brown, thick head, some lacing. Aroma: cherries, wine, some wild notes, vanilla, vinegar. Medium sourness, light to medium body. Taste: cherries, bit malty. Finish: nice barrel - wood and vanilla. Overall great balance between all components.

Flaska från SB. Rödbrun vätska utan skum. Trevlig bouquet med många nyanser. Kärnfrukt, ek, vaniljs och söt bärig vinäger. Smaken bjuder också på choklad, tanniner av det bäriga slaget. Komplex och riktigt god.

Barwa brązowo czerwona, piana mała. Aromat beczki, kwaśny wiśniowy, karmel i wanilia. W smaku wiśnie z dębową beczką, karmel, karmel. Piwo jest smukłe i lekko kwaśne. Ciekawe pifko.

Bottle. Pours dark, opalescent, some head. Wild sour notes, grapes, wood, caramel, red wine. Sour, dry, some bitterness. Medium body, average carbonation. Could be more balanced and have more body.
