Part of the Barrel Trinity 2013 series - came about after a visit to the Somerset Cider Brandy Company at Burrow Hill where Julian Temperley showed us around his amazing farm. On smelling some of his used barrels we thought they would be the perfect vessel to age some of our Ninkasi in. The cider brandy flavours naturally combine beautifully with the apple flavours in the beer and the farmyard brettanomyces character in the beer has become more dominant. This is a beer we always wanted to make and we are delighted to say, it doesn’t disappoint. Not as highly carbonated as the "normal" Ninkasi, this is softer, more mellow, with a long lingering fruit character.

Hazy yellow with white head. Some floaties. Cider, pepper, lemon and funk. Fruity, citric, spicy and lingering brandy barrel finish. Overall: Fresh and crisp. Almost like a dry white wine.

- Cloudy, pale. - Nose: Has that incredibly dry/polysterene nose of a Kasteel Grand Cru; hint of flour-y onion rings and Courvoisier. - Body: vinous (not surprising given 10%!) – like a sunny med White (an Italian Grillo, for example) - Finish: Very long and classy, thanks to the ageing, with that little brandy lick at the end. - Kasteel Grand Cru meets cider brandy, and yet still very much more than a [sunny Med white] wine than a beer. Highly enjoyable.

Aroma of barn Brett. Taste is super complex with some bitterness, some apple astringency not a lot of sweetness. Some apple, little vanilla. Awesome complex medium bodied beer. ---Rated via Beer Buddy for iPhone

Bottle shared. Pours out of an over lively bottle (mild gusher) into a hazy golden with particles and an off white head. Once we got it poured the aroma reeks of light Brett funk, cider, wood, plastercine, doughy malt, brandy and fruits. Flavour is moderate sweet and light to moderate sour. Over medium bodied with high carbonation that quickly goes flat. A strange beer, basically craft snakebite. Drain poured after half a glass.

Bottle: Hazy yellow. Small white head. Aroma wood, wild yeast, apple fruit, barnyard, wild fruity, pight cellar and lacto tones. Flavour is lovely clean fruity with some clean yeast. Saisonic, spice, peppery, light dry, herbal and grainy. Nice. With a touch of wood. Aftertaste is woody, malty, yeasty and light fruity. Low carbo, creamy mouthfeel, close to full body.

330ml bottle. Pours hazy gold with modest cream head. Taste is hugely complex with a big brett character and a delicate bramley apple / cider influence following you throughout, pushed through by a sparkling carbonation. Intensely captivating blend.

Blending Ninkasi beer with cider and barrel age it on brandy barrels. Beautiful idea. The nose is complex: oaky, lemon, apples, brett. The taste is boozy, grapes, apples, beautiful tart (lactic acid), roze snoepkes, and minerals. The beer could improve when it is less boozy in the end. Reminds me of Petrus Aged Pale Ale. Could be a very good beer to age. thanks berntholer for the gift!

I think this is a bit ok really, the sour is much less than it could be, the aroma has some oaken unless I’m making it up, the overall is quite nice. .... for a sour beer.
