Part of the Barrel Trinity 2013 series - came about after a visit to the Somerset Cider Brandy Company at Burrow Hill where Julian Temperley showed us around his amazing farm. On smelling some of his used barrels we thought they would be the perfect vessel to age some of our Ninkasi in. The cider brandy flavours naturally combine beautifully with the apple flavours in the beer and the farmyard brettanomyces character in the beer has become more dominant. This is a beer we always wanted to make and we are delighted to say, it doesn’t disappoint. Not as highly carbonated as the "normal" Ninkasi, this is softer, more mellow, with a long lingering fruit character.

Pours hazy golden color with frothy - but substantial - clean white head. Clean cider-apple aroma, without the unpleasant farmhouse notes. Almost like a perry with more depth thanks to some sherry, citrus notes and a dash of light malt. Fairly sweet flavor with citric-acid pangs. Yeast. Very light for the abv and extremely quaffable. Refreshing brett-sour dryness in the finish. A little warming alcohol in its wake. Very nice.

On tap at Beavertown Extravaganza. Aroma is quite boozy with yeast and old wood barrel notes. Taste is dominated by cloying yeast and some background sweetness.

Bottle. Completely empty beer, just some apples and acidity with weird bitterness. Bit disappointing.

Funky aroma, sour, apple, apricot, golden with a good white head not very persistant, medium body, alcohol is etremely well hidden, fizzy, apple and apricot again, sour, astringent...a very good beer.

330ml bottle. Lively on opening, pours a golden colour with some brown floating particles and a large frothy white foam head that leaves lacing. Aroma of lemon, fruity, some apricot, and funk. Taste is grainy, with tart citrus rind, mellow fruity orange, apricot and apple notes, woody oak, lactic and funky. Thick smooth mouthfeel, medium to full bodied, soft carbonation, dry warm sour tangy finish. Very drinkable.

Pours a lovely golden with a fluffy head but there’s far too much sediment. The aroma is a lovely sweet peach. A lovely peach and Belgian yeast flavour too.

Bottle.Pours hazy yellow. Aroma of funky brett, wood, sour berries and apple. A good mix of flavours with some light tart sourness offset with a touch of sweetness. This is a slightly odd beer but in a good way. Very enjoyable.

Bottle sample at a tasting at troubles’s place. Thanks Yoav. Cloudy orange-yellow with white head and lots of sediments. Fruity aroma with notes of apple and apricot, some funk and yeasts. Funky flavor with notes of apricot and green apple, some alcohol and wild yeasts, dry. Medium-bodied. Very good.

Bottle sample at a tasting at troubles’s place. Thanks Yoav. Hazy yellow. Great sourish aroma, funky, with apples, wood, sweat, flowers. Tart flavor, funky, woody, fruity, lots of apple. Medium-bodied, rounded. Alcohol is well-concealed. Very good.

TSJEEFKE (2) - BELGIUM - NOV 3, 2015 does not count
Nice yellow colour to start with. The smell is refreshing with hints of apple, funky Brettanomyces and some oak. Taste is softly sour with some white grapes, very fine carbon dioxide. Beautiful dry finish. To some extent this reminds me of champagne, due to it’s elegance and mouthfeel. Nice one!

Bottle from Hop Hideout in Sheffield. Pours light golden in coloue with a very small off white head round the edge of the glass. Nose is gose like-tart and citrussy. A little tart, yeasty and refreshing with a toffee apple, dry sherry taste at the end. Really different but good.
