COMMERCIAL DESCRIPTION
Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (its the Wild way!) once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

11.2 oz. bottle as "Iduna Cru"; shared with Boo. Aroma: Moderate musty apple juice and gum; lighter pepper, hay and lemon. Appearance: Hazy gold color with a foamy white head that settles into a bubbly skin. Flavor: Bittersweet cider up front with a gum yeast background; more saison-like towards the finish with lemon and eventually pepper; I wouldnt call the finish dry exactly, and it does carry on with something reminiscent of white grape. Palate: Full body, sticky texture, lively carbonation, long finish. Overall: I thought this was "fun" more than anything else; close enough to saison to fit in the category broadly speaking, but different enough to be its own thing altogether.

Bottle, 750 ml. Opaque, massive white head. Grassy, fermented fruits, pineapple, wheaty aromas. The bitterness of the spontaneous fermentation is tempered nicely by green apples, winey notes, alcoholic warmth, some vegetable. This brew is complex and best enjoyed sipped. Good stuff!

Pours light golden and clear with a frothy white head. Has a champagne bret nose. Taste is quite sharp and citrus with a bret finish. Nice but not my favourite wild beer.

My Bottom Line:
Doughy yeast, peppery accents and subtle citrusy fruitiness ride this brews expansive effervescence, building a simple, dry Belgian-style Strong Ale.

Further Personal Perceptions:
-A sheet of foam settles atop the cloudy beige.
-Apple flavors are pretty shy. So is the wild yeast. Pretty disappointing on that front in that the Belgian yeast character dominates and balance of ingredients isnt attained.
-That being said, this yeast is comfortable and rustic.
-Hops are understated but contribute pleasantly to the fruitiness.
-Bitterness and acidity are minimal.

750 ml bottle. Nose is bretty apples, spice, lemon, grapes, straw. Very dry flavor with apples, grapes. Fabulous sharp carbonation from the champagne yeast. Great.

Draft 0.15l at Bierproeflokaal In De Wildeman Amsterdam, The Netherlands. 21.09.2016. Taste with Vlada Ciaone. Pour it hazy yellow color with small white head. Aroma funky apple, yeasty, sweet amazing. Taste nice smooth yeasty, nice pleasent fruity feel all the time, pinch of tart, quite dry finish, champange feel, perfection, medium body, creamy, slick feel, lively, long finish.

.75l bottle from Alko Arkadia. Rated in Hannikus cave 2.0. Pours cloudy yellow with medium. Aroma is vomit, grainy, malts, stingy herbs, nettle, lemon grass, bubble gum, citrusy and alcohol notes. Flavor is mostly same. Malty, honey and herby. Some sweat-ass-sauna.
