COMMERCIAL DESCRIPTION
Bubbles + Apples + Wild Yeast photo (16) Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (its the Wild way!) once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Had the beer during the 2016 Kompaan Bloedbroeder festival.The beer looks simple. The color of the beer is light yellow, with a slight cloudiness. On top of the beer there is a rough white layer of foam. The beer looks a little like a weizener. The smell is a bit like a saison. Nice fruity tones give the beer a sweet, freshly sour and a bit bitter touch. I also smell some clear yeast aromas, which most Belgium ales tend to have. There are also some bready malt touches, which are nice together with the zesty fruit aromas. There is a good blend between bitter, sweet and slight sour. The taste is also good. I taste pear and apple and some raisin. The beer has a nice sweetness, slight sourness and a nice bitterness. It is in good balance. It is a bit like a blend between a Belgian Ale and a Saison. There is a nice yeasty Belgian Ale touch and the hops and fruits of a saison. I like it. The palate is nice. It has a nice amount of gas, that propels the taste and aroma nicely and tingles the tongue in a nice way. Nice beer.

UPDATED: APR 15, 2017 Pours hazy golden with medium white head. Aroma is sourish, some citrus, hay, dry, some wood, light grapes. Taste is sweet, hay, yeast, apple, some silage, autumn leaves, mushrooms, mould. Mouldy and light sweet beer.

Bottle thanks to harri siirak. Pours pale (hazy) yellow with huge white fluffy-sticky head. y.Aroma: hay, yeasty, malty, some weak spiciness. Taste: medium sweet, rotten berries, malty, some wheat, something rotten, Interesting but not for me.

750ml bottle. Thanks, Harri! Pours, golden yellow colour. High white head. Sweetness, grain, grassy, bit earthy notes in the aroma. Slightly sweet, bit caramelly beginning. Slight yeast and candy sugar in the middle. Dry finish. Grapes and hints of dry riesling in the aftertaste. Rather medium bodied, complex brew.

Hazy sunshiney golden under a large bubbly rocky white head. Big bright estery dusty apricot and champagne yeasty esters and a kiss of apple. Bright dry funky fruit tones with the same peachy apricot tones from the nose with a long, dry, funky complex finish. Pretty funky and applet and bubbly and complex.

September 15, 2015 at Craft (Islington) - keg draught. Slightly hazy orange-gold with an attractive fluffy/creamy white head (almost a 5). Smells like a very dry slightly buggy saison, with not much alcohol - light apple. Taste is "like an imperial young Orval with more alcohol and fruit character" - definitely pear/apple, and dried wildflower bitterness - quite a lot going on there. Solid body, very lively, finishes medium and dry, brett or wild yeast in the linger. Solid stuff, would like to try it again.

Fat @ CASC, Aberdeen. Grumlig orange med ett vitt skum. Dofter av citrus, jst och rter. Smakinslag av desamma samt pple. Torr munknsla.

Keg at Casc. Pours clear, dark gold with soft white head. Aromas of apple peel, lime zest and spicy yeast. Taste follows nose with a heightened peppery spice and pears. Raspberry and apricot somewhere in there too. Soft mouthfeel with a moderate, dry sparkle. Apple is prominent so I cant help but reminded of a dry cider albeit with a fantastic zesty follow up. Its spicy and sharp and utterly delightful.

11.2 oz. bottle as "Iduna Cru"; shared with Boo. Aroma: Moderate musty apple juice and gum; lighter pepper, hay and lemon. Appearance: Hazy gold color with a foamy white head that settles into a bubbly skin. Flavor: Bittersweet cider up front with a gum yeast background; more saison-like towards the finish with lemon and eventually pepper; I wouldnt call the finish dry exactly, and it does carry on with something reminiscent of white grape. Palate: Full body, sticky texture, lively carbonation, long finish. Overall: I thought this was "fun" more than anything else; close enough to saison to fit in the category broadly speaking, but different enough to be its own thing altogether.
