COMMERCIAL DESCRIPTION
Rooting Around is a seasonal beer series for 2017 embracing our local terroir. Brewed for each season with foraged ingredients available to us at the time. Tying together seasonality and foraging is something we can really get behind at the Wild Beer co. Rooting Around - Summer, utilises all aspects of the cherry tree apart from the fruit. Branches in the mash tun, buds and leaves in the boil and most importantly blossom (both white and pink) post fermentation. Finally aged in ex Modus Operandi barrels with our wild cultures, this beer is bold, tart, and robust yet full of the nuances and complexities of the cherry tree.

Bottle. Fruity and leathery funk, rather subtle cherries, soft mouthfeel, sharp, almost vinegary finish, yellow plums, slightly water. Decent but I was expecting something better.

Draught at Taphouse. Hazy amber colored with a small white head. Fruity and light acidic aroma of apricots and barnyard with notes of cress. Fruity and light acidic flavor of barnyard and citrus. Tart finish.

33cl bottle. Light hazy yellow colour. Sweet and acidic aroma, fresh, citrus zest, funky, wild. Sour in taste, very refreshing but definitely overcarbonated. Fruity and flowery.

Pours very hazy orange, topped with sospy white head that is gone immediately. Soury nose, wine cellar feel with leathery presence and some flowers. Puckery soury taste, quite strong. Dry finish. Sparkly texture, light body. Fresh feeling.

November 2017 - Tasting in Hackney. Bottle shared with big thanks to Fergus. As 'Wild Beer Rooting Around - Summer', 6%. Hazy orange, lightly sparkling, foamy dense white head leaves full lacing. Aroma is lambic-like, apple, oaky. Smells great actually. Body is light and frothy with tingly carbonation. Taste is tangy minerally gooseberry-like fruit, a touch washed-out sodawater, a little vinegar acidity. Quite good on the whole but the flavour doesn't live up to the very authentic aroma. (9-4-7-3-16=3.9)
