COMMERCIAL DESCRIPTION
Rooting Around is a seasonal beer series for 2017 embracing our local terroir. Brewed for each season with foraged ingredients available to us at the time. Tying together seasonality and foraging is something we can really get behind at the Wild Beer co. Rooting Around - Summer, utilises all aspects of the cherry tree apart from the fruit. Branches in the mash tun, buds and leaves in the boil and most importantly blossom (both white and pink) post fermentation. Finally aged in ex Modus Operandi barrels with our wild cultures, this beer is bold, tart, and robust yet full of the nuances and complexities of the cherry tree.

Pours hazy golden with a very fizzy short lasting white head. Aroma has notes of malt, yeast, funk, tartness and some fruitiness. Taste is light sweet and light to medium sour with a long funky, fruity and tart finish. Body is medium, texture is thin to oily, carbonation is fizzy.

Bottle at LKS. It pours cloudy goldenw with a thick white head. The aroma is fresh, bright, floral, cherry, red berry, Granny Smith apple, lemon sherbet and must. The taste is crisp, dry, good mouth - pucker, Granny Smith apple, sherbet, florals, minerals, quite bright, pear skin and sour candy with a drying finish. Medium body and moderate - high, foamy carbonation. Quite nice overall.

Bottle shared in Hackney - thanks to Fergus. Pours unclear yellow-gold with a creamy, white head. Nice aroma, some tangy lemon, a bit of acid, hints of wheat, straw. Light sweet flavour with sturdy lemony acidity, some herbal notes, peach, alcohol. Medium bodied with fine carbonation. Warming finish with quenching lemony acidity, light sweetness, some salt, sweat, a little woody dryness. Good one.

Taste is light sweet, moderate sour, tart & fruity, herbal. Medium bodied, soft spritzy carb. Dry, slight puckering finish.

Pours nice clean orange, some white foam on top but otherwise low carbonation. Well it's a sour after all. Nose has lots of vinegar, some apple skins fermentation thing going on plus some funk as well. Taste brings out the acidity, quite a lo of vinegar thing going on there. Feels like a sour cider actually, with some extra vinegar added. Finish has some relatively surprising malty undertones and some apple skins. Good one.
