COMMERCIAL DESCRIPTION
Dionysus Cuvée is a barrel-aged wild ale based on our Eschaton quadrupel, blended with five additional unique barrel-aged wild ales. Oak and wine notes combine with a mild tartness and the underlying sweetness from the quad base to create a delicate yet big-flavored beer.

750 ml. 2016 vintage is a slow gusher. Pours deep chestnut with a thin film of cream. Nose is plum and red wine. Taste is red wine, brown sugar and barrel. Hints of tobacco and chocolate in the long finish. Medium-heavy body has smooth medium fizz and a mild sour.

Bottle. First whiff: holy brett! Pours exceptionally foamy. Foam never goes away but settles in to a manageable topping. Flavor is an enjoyable muddling of a malty Belgian ale and a wild ale. Chewy and substantial. Lots of stone fruit and chocolate with a nice tart balance.

Sample at Gabf. Pours a dark brown with small beige head that lasts. The aroma is funk, oak ,leather. Medium body, leather, oak, yeast, light tartness, good.

5/1/16. Growler from Craft on Draft. Dark brown pour under a nice khaki head. Interesting beer, lots of complexity. Dark cherry aroma, whiskey, malty, caramel, toast, a touch of leather, very mild tartness. Rich flavor, whiskey, oak, caramel, leather, tobacco, dark fruits, dark cherry, mild tartness. Tasty. Like a more complex but less sour Rodenbach Grand Cru.

A dark red-brown pour. Red wine and cherry in the aroma. The taste brought more of the barreling and slight tart presence. I wonder what all the wild ales that were blended with this, because it does have an interesting taste. Pretty sticky and sweet for a sour. Still nice to try.

Bottle. Did not explode or even not really a gusher, but did produce a large tan head. Caramel and wine aroma. A tad thin, but nice blend of light tartness and some mild candi sugar sweetness. Solid beer.

Super gusher. Put this in the fridge now and don’t let it sit around. It will explode in your cellar otherwise known as my closet. Pretty neat drink otherwise. Lots of body, cherry fruit, wood and a bit tart. Earthy woody aromas. Flavor is a little earthy and cheesy on the finish. Complex and good.
