How about a big, malty beer that evokes a good red wine and with a drier finish than you’d expect at 10.5% ABV?

Eschaton is a one-of-a-kind oaked all-malt Quadrupel (or “Belgian Strong Dark” if you prefer) that abounds with dark fruit and pit fruit flavors as well as earthy spiciness. Vanilla oak and warm viniferous notes assert themselves as the beer warms to reveal additional layers of delicious complexity. 22SRM

Suggested food pairings: Lamb, rabbit, duck, Stilton cheese, Belgian chocolate, tart fruit desserts.

Draft. This is a nice simple Quad with lots of nice deep sweet malt flavors. I paired this with a small glass of club soda, rich espresso, and macaroons. It was quite a combo.

Sample @ RBWG, Asheville. Brown pour with a small off-white head. Over-ripe banana mash. Banana bread. Some roasted earthy grain. Toffee. Strong chocolate flavor. Cocoa. Bananas fosters dessert. Burnt brown sugar. Pretty sweet. Medium body, soft carbonation.

Bottle shared by the Beer sommelier during RBWG. Pours a hazy dark amber brown color with a small beige head. The aroma and flavor have sweet caramel malts, banana, dark fruit, mild spices, a hint of a vinous note, brown sugar. Decent, not great.

Hazy dull light brown, aroma is malty lightly fruity, good hop balance, a light fruity tartness, spicy...I like this. The unfiltererd character is quality.

UPDATED: FEB 26, 2014 Tasted from bottle at the Friday night tasting at RBWG Asheville, thanks to TheBeerSommelier for this one. Pours clear orange-amber with an average beige head that slowly recedes to a thin collar. The nose is spicy caramel and toffee (typical quad), with a lightly vinous note. The flavor is more vinous and very dry Belgian spice with the toffee and caramel sweetness coming through on the back. The body is full with lively carbonation and a long vinous toffee and spicy Belgian finish.

Bottle shared by TBS at the RBWG dumpy motel Friday night tasting. Pours a clear orange-amber with no head. Notes of caramel, honey, wheat, earth, apple, oak, and mild spice. Light-medium bodied, with low carbonation and a smooth mouthfeel. Quad? Doesn’t make for a good one. Just a sub-par strong ale.
