Profanity Stout is the first in the Williams Bros ’chapeau’ series, in which we celebrate the skills of amateur brewers whose beers we think are exceptoinal and should be made available to a wider audience. With Profanity Stout we doff our caps to Peter and Craig, the ’Balls to the Wall’ brewing duo, who developed this recipe as students on the brewing course at Edinburgh’s Heriot Watt University. The beer is a blend of rich coffee and intensely fruity hop aromas on a base of full velvety malty mouthfeel.

Bottle 330ml bought at faire. Surprising fruity and floral aroma, tune of alcohol. Great really velvet feel at palate. Taste also surprising, lot of flowers, some malts, sweet, coffee, no alcohol in feeling. Low bitterness.,

There's an undeniability here to the fact this beer doesn't know what it wants to be. Appearance-wise, it's an obvious stout. The mouth feel also compliments this. However, the palate is heavily hopped and fruity with burned and roasted flavours, acting like a mish-mash between IPA and Stout. This combination seems to only bring out the worst aspects of both styles for me. Disappointing.

Pours black with a tan head. Aroma is sweet, slight acidic, grape. Taste is slightly sweet, dark oak, slight sour grape, ending slightly acidic and bitter and dry. Bitterness lingers. medium bodied, medium carbonation. More bitter than many stouts, quite fruity, pretty nice!

Aroma is rich and hoppy, with liquid chocolate, dark fruit jam, cake, roasted coffee notes. Taste is sweet but bitter and hoppy with cold coffee, brown bread, chocolate liqorice, and sticky, burnt sugar. Finish is dry and there’s a note of stale bitter coffee in there. Nice stout, albeit a bit too sweet.

En god stout. Der er smag af lakrids i stor stil, og ikke alt for meget sødme oveni. Kun en enkelt som nydeøl, ellers bliver lakridsen for meget.

Coulée noire d’encre, mousse beige... Rien à dire, c’est un Stout ! Le nez est comme convenu sur des malts torréfiés avec de bonnes notes de chocolat noir et de moka, mais on décèle assez facilement les houblons : pointe de citron et de pamplemousse, côté floral et surtout végétal ainsi que boisé. En bouche, arômes de noix fraiche avec une pointe d’astringence qui assèche le palet, alcool sobre pour un Imperial Stout (c’est plus un Stout corsé), carbonatation vive et pétillante (belle surprise), texture ronde et un poil huileuse et belle amertume franche. Ce breuvage est assez peu sucré, les saveurs sont agréables, l’alcool discret comme je le disais plus haut mais il fait son œuvre sur la longueur. Il me manque des arômes plus travaillés et de la complexité pour vraiment prétendre être un bon Imperial Stout. Le final est pleinement sur le chocolat amer et le café, avec des notes de cuir, de bois, de résineux... Au fur et à mesure de la dégustation la petite astringence disparait car le palet s’acclimate assez bien. On décèle au nez en faisant tourner la bière sur la langue de petites notes très subtiles de cave et de champignon avec les levures, mais rien de bien inapproprié, au contraire. Rien à dire, c’est un bon Stout mais pas une bière exceptionnelle. However, job is done ! Bouteille 33cl, Boissons du Monde, Saint-Egrève.

UPDATED: MAR 7, 2017 Pours black. Aroma is more varied than your typical stout - chocolate, perfume, floral, candy. Taste is chocolate, smooth balanced roast. A well balanced beer that has an innate complexity to it. Medium bodied. This was my final beer after having several 9+ %ABV Orkney stouts and this was by far the most enjoyable.

330ml bottle. Pours jet black with a tan head. Nose is roasted malt, coffee, dark chocolate, black cherry and orange peel. A bit thin for the style and abv. Taste is good though, roasted malt, brown bread, treacle, coffee, dark chocolate, cherry and Christmas cake. Bitter at the end, with some orange peel. Tasty.
