draft at Trillium in Denver. it’s certainly hearty and robust with a surprisingly firm and rounded body and tight carbonation; mild to medium acid and dryness combine with the mineral-rich yeast and roast/chalk/toasted cereal grain malt experience. the rye and caraway seed are subdued and complimentary, allowing the roasted malt (coming across as chicory, cocoa powder and mild char) to plain the lead. finishes with low bitterness and moderate dryness. this one took me by surprise, and while I wouldn’t say that my faith has been restored in Wynkoop, this and the Silverback were much, much better than the last half-dozen Wynkoop products I had before I gave up on them about 2-3 years ago. On tap at Back Country Pizza Boulder poured a clear dark reddish brown with a lasting tan head. Aromasof roastiness, bitter chocolate, rye and light cherry. Palate was light bodied and smooth. Pours a dark brown/black with a nice brown head. A grainy and sweet aroma. Taste starts off sweet with some chocolate and some coffee, this is followed by the rye that gives it a nice spiciness and graininess. A nice medium body and creamy in texture. (rating #1400...cheers DOTW!!) On nitro. Black pour with a thin light khaki head. Aroma of roasty dark chocolate, light smokey tones, and candy sweetness. Taste is nice and dark with sweet malty tones and a dash of chocolate. Starts with a smoky coffee tone, turns sweet and chocolaty with a dark sugar sweetness, but remains balanced by a quiet bitterness that becomes more apparent at the finish. Light but full flavored. Complex yet simple. Excellently balanced. Pretty nice stout!
