It’s tough to describe the breakdown of it but we basically kept blending it into one of our smaller 10 barrel fermentors that we kept... until we liked how it tasted. But I would guess it’s probably around 30% barrel aged Sue, 65% sour Sue, and we did blend a little fresh Sue in (5%) to round out the aroma.

75 cL bottle. Pours hazy dark brown with a small brown with a brown head. Aroma is dark roasted and liqourice. Fruity and mild smoked. Dark malty and bitter. Dry malty finish.

Bottle. Pours a black color with a small off-white head. Has a fruity slightly roasted malty sour funky aroma. Fruity sour tart caramel flavor. Has a fruity malty woody sor tart finish.

Thanks for the bottle, RJ! Pours almost black in color with a tall khaki head. Nose is heavy on the roast with a hint of smoke. Sour cherries, green apple, raisins, and plums on the nose, too. A touch of berries and vinegar. Tastes decently acetic, but a nice complexity. Tons of roast, mild smoke, dark fruits, and quite a strong dryness. Definite tannins going on here. Not terribly funky, but a little bit of leather and black pepper.

750 ml bottle poured a clear dark reddish brown with a lasting tan head. Aromas of bourbon, cherry, smoke, oak, roastiness and dark chocolate. Palate was mediuim to full bodied and smooth with a dry lightly tart finish. Flavors of smoke, roastiness, cherry, dark chocolate, light oak and light bourbon with a smooth dry lightly tart lingering smokey cherry finish.

Bottle shared by alexsdad06. Poured a black color with an average to large frothy brown head that mostly lasted with good to excellent lacing. Moderate to heavy toasted malt, sour tart fruit and smoke aroma. Medium body with a smooth texture and soft carbonation. Medium to heavy sour & sweet flavor with a medium to heavy sweet & sour finish of moderate to long duration. This beer exceeded my expectations.

Bottle received from Ratman. Pours opaque with a large, creamy tan head, medium retention with good lacing. Aroma is vinous, oak, plums, cookie and toast malt with acetic acid and spicy hops. Flavor is malt forward with vinous notes, plums and figs with light hops and bitterness, oak and a dry finish. Full body and medium carbonation.

(750ml bottle) Pours a dark brown body with a medium beige head. Aroma of roasted malt, vanilla, raisins, grapes, and citrus. Flavor of roasted malt, dark fruit, vinous, subtle smoke, and oak.

I got a little pour of this in Tampa...really a cool beer. Dark pour, cream head. Aroma is quite the mix of light sourness and smoke. Flavor blends the two together really well. Just an incredibly unique beer.

Bottle @ Crooked Stave Reserve Society bottle share, courtesy of joshclauss. Thanks! Pours a black appearance with a pretty small, brown head. Tart, acetic fruity, woody, light chocolate aroma. Mild vinegar, dark chocolate, cherry/raspberry, light smoky, kind of burnt flavor. Ok.
