On Friday the 10th of December, Willem Van Herreweghen - former brewmaster of the Palm and Rodenbach breweries, founder of the gueuze blendery De Cam and co-creator of the Millennium Geuze - will unveil at the Castle of Eizeringen the secrets of spontaneous fermentation and the art of gueuze blending, and will show you through the eye of his microscope the famous brettanomyces bruxellensis and lambicus in a live presentation. At noon, Christopher Lively, master chef of the world’s best beer restaurant, Ebenezer’s Pub in Lovell, Maine, USA, will be waiting at the lambic pub In de Verzekering tegen de Grote Dorst to prepare for you a fantastic 5-course meal. After lunch, you will put your theoretical knowledge into practice under Willem’s guidance in the historical kitchen of Castle Neufcour. There, you will taste the unblended lambics, you will make your own blend and you will bottle yourself the very first geuze mise en bouteille au château. A true world premier!
