SOUS VIDE PORK BELLY AND QUAIL EGG
grilled scallion oil, radish, pork confit, micro radish, fresno chili, lemon zest. Paired with Lambic.
CHOCOLATE, RED CHILI, AND MALT RUBBED PORK LOIN
butternut squash puree, hakurei turnips, butterball potato puree, herb salad, fresno chili, flanders deni glaze. Paired with Flanders.
WARM CEDAR BOARD "MOONGLO" GOAT CHEESE
caramelized pear, sour imperial red ale honey, beer boiled and candied walnuts. Paired with Sour Imperial Red Ale.
CHOCOLATE BACON MOUSSE
centennial hop milk and honey foam, pecan crumble, peanut powder. Paired with Frambroise.
