Can never go wrong with a good Trappist. Rochefort 8/10, Westy’s 8/12, Westmalle Dubel/Tripel, you get the picture.

Seasonings, sauce?

I am using a black cherry balsamic reduction on my filets. What would you use for that?

Sorry to hijack.

How fatty is it?

How much caramelization?

Any spices on it?

You can play with all of this in terms of pairing. Basic indoor steak with a good sear and salt and pepper? The Trappist recommendation or malty German brew works well.

If it’s appreciably fatty, I can see dropping back to a light saison, light lager or hopped lighter pale ale for hydration and palate cleansing.

Spices? Then it depends what they are.

If it’s got enough smoke in it from an outdoor grill, you might play with that as with a porter or even a smoke beer.

You can hinge on the roasty edges with a dark malt.

You can complement the sear with malty caramels.

You can cut through the fat with hops or effervescence.

You can complement earthiness or a peppered steak with a beer spiced with coriander or contrasted with something grassy.

OR

you can just pair with grape juice.

Come now... where’s your imagination? You can delve into the pairing or you can punt on first down.

I usually marinade my steak in a little of whatever I happen to be drinking. Decadent IPA was surprisingly good. Orval, not so much. It was the only thing Shiner Smokehaus is good for.

I like good brown or amber ales with red meat
