I need to get something in the fermenter that will be ready fast, so I’m doing a simple 5% ABV pale ale with all Cascade this Saturday. Hoping to be able to keg it two weeks from brewday, we’ll see how it goes.

6 lbs LDME

2 lbs 2 row

1 lb roasted barley

1/2 lb chocolate malt

1/2 lb crystal 120L



1.5 oz Chinook @ 60min

1 oz Chinook @ FO

I you doing a partial mash with that 2 row and the specialty grains?

Also, you may want to pump your DME up if you are really going for an "Imperial" stout. Just my 2 cents though!

Ended up with an English mild that is slow to kick but finally working

Straightforward, 100% Citra DIPA this weekend. Nothing crazy, just something nice to have on tap:

Malt:
10# Crisp MO
1# Carapils
.25# Red Wheat

1.5 qts/# sacc rest @ 149

60 min boil

1.5 oz Citra @ 60
.5 oz Citra @ 15
1 oz Citra @ FO
3 oz Citra Dry Hop

1056 for 7 days, cold crash for 2, 14 day secondary

Brewed a saison with juniper and kaffir lime leaves a couple days ago. We got 86% efficiency, which is at least 10% higher than what we’d get with our old mash tun setup. I’m pretty stoked

Normally, Mon, Tue, or Wed are my brew days, not the weekend, and yesterday’s was a standard, weekly trans-Atlantic half-IPA:

7,2 # Weyermann Organic PA
5-1/4 gal (US) pre-boiled (150°F), 3-1/8 boiling for mash-out (sparge-free, duh)

30 gm Chinook leaf 60 min
50 gm Chinook/Centennial 15 min
40 gm Chinook/Centennial 5 min
40 gm Chinook/Centennial during chill, held for 5 minutes at 78°C

1.035 OG / theoretical 120 IBU

US05 in 10 gal SST kettle with lid, semi-open ferment

Will probably yield 5.5 gal, to be bottled on Wed

Same batch 3 weeks ago but with 30 / 50 / 50 / 50 gm of 21%AA Polaris is theoretically 180+ IBU and absolutely lovely, FWIW.
