Cabbage bought. Preparing jars and getting ready to slice. How did it go with the rest of you?

I haven’t made sauerkraut, but I love it when it’s good. For me, it not only requires smoke, but I also need caraway or fennel in it. Mushrooms -- especially dried mushrooms -- are darn fine as well.

On the other hand, my Asian refrigerator pickled watermelon rind are delicious.

MiP my sauerkraut got a bit of use at a party sunday, not done but still a bit tangy and fresh. However, the pickled onions were a huge hit on smoked sausage, and as a condiment on chili and potato salad. Going to taste the beets when I get home from Chicago tomorrow, will advise

Four days ago, I made three different jars out of the same cabbage. The plain one and the one with carrots are crunchy, but the one with ginger is a lot softer. They all taste all right, but next time I will definitely use caraway.
