Yo, check it. If you ain’t drinking beers, then what alcoholic beverage are you usually consuming?
Me: Sake, scotch, gin, mead, ciders.
I adore rusty nails so the love for scotch is obvious.
I will literally only drink vodka when it’s used in a dirty-as-a-goddamn-swamp martini.
Probably more, too. Can’t think of all the other spirits I enjoy, but that’s the basic list.

Sometimes your best alternative really is water, iced tea, or lemonade. Lots of places have great food but meaningless beer lists.
As far as other preferences (rather than good alternatives):
Single malt scotch (many average blends are fine but just not as interesting)
Good red wine (it’s hard to even finish a glass of fruity, sticky jug wine)
Good white wine (people who know how to pick good whites seem to be one of the rarer breeds of wine geek)
Sake is good with sushi
Cider is good once in a while, especially at the source. Lots of cool cideries in WA
Meads are nice if you are in a state where you can handle that much sugar

Pretty close to my preferences. I tend to drink: beer, beer, beer, (keep going with beer for a long time), scotch, red wine, rarely cider, sake even more rare as is sushi as I tend not to be able to afford it and there may be meads that are not sugary sweet but I am tired of trying to find them as I do not care to keep trying.
At functions with a free bar, gin and tonic is often my go to as it has been an old stand by that seems hard to fuck up.

Single malt, usually an Islay or sweet Highland or Speyside, cheap bourbon, or, cocktails. Corpse Reviver #2, Negroni, old fashioned, sazerac, and mint julep are some favorites.

Weekdays: Bourbon about 65% of the time Scotch 20% of the time The rest is wine (mostly reds, sometimes whites or champagne) Friday - Sunday, beer. I will on occasion have some beer during the week if there’s a growler that needs to be consumed. One day every 2 weeks,I’ll have some hard cider or ice cider. Once a month, I’ll drink some mead that’s already open.

Not a lot anymore. Occasionally, I’ll sip on some bourbon. Other than that, good quality tequila once in a blue moon. A bottle of each will get me through a year. I’ve pretty much stopped drinking any hard alcohol.
