If you’re eating Smithfield, you’re doing it wrong. Smithfield style ham is not the same as the megacorp Smithfield anymore. There is still plenty of artisanal stuff out there. Or you can be like me and butcher your own.

That’s pretty neat that the ban is lifting but there is so much fantastic American made cured meat from heritage hogs that it’s going to be difficult to justify the expense of the imported stuff.

I’m with you, but you know that there are folks out there who are still going to buy the imported stuff all damn day. I’d like to see the stats on how much prosciutto di parma get’s sold in Des Moines as opposed to La Quercia’s stuff that lifts serious reps and is made quite literally down the road from us.

Yep, La Quercia spends many hours a day in the gym and is available all over the place here. Hell, I only have to walk 25 ft to go and get a bunch of fresh cured/smoked meats at our deli.
