In Norway we still have the farmhouse yeasts that people were using to brew farmhouse ale hundreds of years ago. They’re called kveik. When I say we still have them what I mean is that people never stopped using them, so the yeasts are still around in people’s refridgerators and freezers. We’ve been collecting them, and now some breweries have used these yeasts in commercial beers. |
