Bergkäse. Lots of Bergkäse of different age (mostly from Vorarlberg, our Bergkäse is technically related to Gruyere, just more intense and tangy). Sometimes used to please others at a tasting session.

I’ve been eating the Cropwell Bishop Shropshire Blue for almost a week now. It went very well with a 98 J W Lees Harvest Ale. It was also tasty with fresh pears and procuitto or drizzled with a dab of local honey

Just loaded up for NYE with an organic triple cream and some dope-ass jasper hills including: Cabot Clothbound, Bayley Hazen blue, and Greensward - supposedly a collab between Murray’s and Jasper made for Eleven Madison Park. Going to eat the living shit out of these...

sounds rather nice. We were drinking sweet wine (tokaji) with it today.
