Anybody tried a wild/spontaneous fermentation? It's something I'd like to do but haven't had the balls to try yet.

You don't need balls to do it. Just the right conditions and the willingness to fail. If you really want to give it a go, I can certainly point you in the direction of some excellent reading on the subject. FWIW, I've done a bunch of them. All, very luckily, with good results.
