Proof is a great little bar tucked away in a mess of FSU’s college bar scene. Brewery on site, that knocks out some superb brews, esp their Rye. Liquor store attached that sells almost zero macro, and a medium sized craft selection, but the selection is well varied. I frequent here several times a week. If you’re not of college age, don’t worry. The college crowd doesn’t show up until pretty late (9ish); so you easily find a seat and a bartender to chat beer with. Most of the staff is knowledgeable about most beer styles, and they certainly know the beers brewed in house.

What can I say? I love this place and it’s a shame I can’t go here as often as I did when I lived in Tallahassee. Every now and then I make sure I stop by when I’m in the area. The atmosphere of this place is amazing and is very classy yet casual. The selection is hands down the best in the area with frequent events featuring different breweries or beers. Relatively recently, they began brewing their own beer. Once they open up their larger brewery it will give Cigar City a run for its money. The staff is extremely knowledgeable and they are always up to date with everything going on in the industry. I am never disappointed with my time here. If you are in the area, you need to stop by here.
This is a promising bar in a dreadful location. Great rotating tap selection downstairs, but if you’re here on a weekend after 9 PM, the place is overrun by obnoxious undergrads drinking Bud. Go for happy hour and then run away as fast as you can.

I liked the downstairs v. the upstairs - but then I’m an old man not trying to pick up grad students. The service is first rate. The selection is really good, they try to collaborate with other regional microbrewers, so there’s no telling what’s on tap at a given moment. It’s right next door to the bottle shop, which is a plus. Parking is tight - I didn’t realize that they had the back parking lot for a long time. This is a place that I need to get to on a more frequent basis, but it’s just inconvenient to my usual trafficking. If you’re in town for an FSU game, on a party weekend, then it’s a must.
Very nice and modern atmosphere, friendly staff that definitely knows their stuff about the beer they have, especially the in house beers. The best selection in the area, hands down, with great prices, including a different $3 beer every night of the week. Awesome!
The Proof crew does tastings every Friday at the bar and ratebeer folks and other enthusiasts are welcome to join as long as you pony up some good large or small format bottles to share that aren’t readily available in Tallahassee. Make sure you PM jbruner before joining up for a tasting and get stuff worked out- DON’T drop in and expect to mooch off the rating crew. As for Proof itself, it is a large, dark, open space with large screen TVs for watching games so it is a sports bar of sorts but with a focus on craft beer. Large number of taps were sporting leftovers from various beer events so they were Stone and Dogfish Head tap takeovers...so hard to rate selection here though they did have Cigar City on tap before and a pretty deep bottle list that includes things like Sam Adams Utopias (also can be found at Fermentation Lounge but more expensive). Staff is attentive, knowledgeable, and a few are ratebeerians themselves so it can be quite fun having a beer bar run by ratebeerians of sorts. Cool vibe; didn’t just visit here on a random night and chill so my experience is atypical since I was visiting friends and joining a tasting group. Regardless, pretty cool that such a bar even exists that lets you have a tasting inside on your own terms. Sweet gig- a must for any beer nerds in Tallahassee and without a doubt in a safer feeling part of town.
UPDATE: Now this place has their own house beers and is a legit brewpub making this a much more interesting destination. Have tried two of their house beers and the quality is very high.
Proof definitely has a great beer selection at a very good price. However, the ambiance is not for adults. If you haven’t grown up since your college days and you are still walking around in flip flops at 25 then this is the place for you. If you are comfortable getting up every time you want a drink and then reaching over the planted bar patrons shuttling one beer at a time to a friend like the old college days then this is really a great place. Definitely understaffed at times.
50 taps and hundreds of bottles. Other rates are going to complain about parking and the college scene. This is somewhat true, but the fact remains that this bar has the best selection of the best beers available in Tallahassee. That is all that matters if you’re really into beer. If you don’t want to deal with a crowd, then don’t go to a bar in a college town at 11pm on a Friday.
