Bottle 0,75L at Gas Station, Ljubljana. Shared with Kita. Dark brown color with some reddish hue with small, frothy, light brown head. Aroma of wood, cognac, dried fruits, caramel and a touch of Belgian yeasts. Semi sweet taste with dried fruits, burnt sugar and light bitter finish with woody notes. Excellent brew! Thanks to Kita for sharing.

Clear dark brown beer, small creamy beige head, pretty stable, bit adhesive. Aroma: sweet, alcohol, lots of dried fruits, raisins, some chocolate. MF: lively carbon, medium to full body. Taste: sweet start, quite some caramel, bit sourish, milk chocolate, soft bitterness. Aftertaste: alcohol, sweet, sugary, sourish, fruity touch. Not picking up much rum, then again, it’s only 22% and I’m not a rum drinker.

Zapach: Mnóstwo suszonych owoców (rodzynki, figi, śliwki), drożdże, karmel. Smak: Jest słodko i słodowo, znowu pojawiają się suszone owoce, karmel i trochę alkoholu, goryczka jest bardzo niska. Piwo wyraźnie rozgrzewa, jest dość treściwe i mocno nagazowane.

Chimay Grande Réserve Vieillie En Barriques (2016/3)
Bardzo ładna, obfita i drobna piana, całkiem długo pozostaje na powierzchni. Barwa miedziana klarowna. Aromat średnio intensywny - są estry w typie suszonych owoców, cukier kandyzowany, ciemny miód, do tego dochodzi lekki parkiet, świeża dębina, trochę wanilii... W smaku zdecydowanie lepiej - sporo słodyczy w typie rodzynek, suszonych fig, kandyzowanej moreli, jest oczywiście trochę karmelu i miodu lipowego, są jakieś zioła i przyprawy, całość świetnie komponuje się z delikatną, nienachalną wanilią, lakierem czy bejcą, koniakowym posmakiem... Wysycenie średnie do wysokiego, lepkie, lekko oleiste i gładkie w odbiorze. Całkiem nieźle ułożony alkohol (choć pewnie kolejne pół roku na leżaku tylko by pomogły), niewielka goryczka. Klasa.
Ciekawy trunek, quadruplowy charakter oryginalnego, czystego Chimay Blue został tu zachowany, doszły przyjemne nuty z barrel agingu, nawet elementy świeżo położonego parkietu idealnie się wkomponowały w bukiet smakowy. Na minus mało intensywny zapach.

Aroma of yeast and phenols, cloves in particular; beyond that sweet, dark fruit (plums, raisins, cherries) but it takes a good whiff to smell them. Very dark brown pour with massive beige foam. In taste sweet, malty with caramel, plenty of raisins/plums, spicy aftertaste. Mild bitterness. Full body, medium carbonation. Good but not as spectacular as I expected.

Bottle, 0.75l, shared with CanCrusher. Pours hazy dark brown color with thick creamy light brown head and sparkling appearance. Aroma of wood, cognac, vanilla, yeast and dried fruit. Taste starts with sweet and rich toasted malt, dried fruit and burnt sugar, follows by rich woody and vanilla notes, mouthfeel is warming alcoholic, while finish is mild bitter. Full body, creamy texture and average carbonation in palate. I know it’s not so perfect as my rating is, but I just liked it so much...

From 330ml bottle. Pours gorgeous amber-copper with a full pillowy head that eventually fades into a creamy cap. Nose is malt, sugar, dark fruit, lightly funky. Flavors are a delicious, creamy mixture of fruit, toast, caramel, spice. Lightest touch of bitterness comes in on the long finish. Yum. Buying more tomorrow.

Chimay Grande Réserve Vieillie En Barriques (2017/1)
The most recent edition of this new series of barrel aged blue Chimays, this one bottled three and a half months ago and partially aged on rum barrels. Opens with a loud bang and smoke coming out of the bottle, but no gushing, like the other ones. Lacing, pale beige-ish off-white, stable, moussy head remaining closed for a long time, crowning a hazy bronze-tinged chestnut brown beer with burgundy hue. Attractive aroma of plum jam and stewed plums, caramel sauce, violets, jaswin-scented soap, candi sugar, some subtle brown rum indeed, pear syrup, fig, strawberry wine, earthy beetroot, some wet wood, candied banana, honey, hazelnuts, dates, vanilla. Sweet onset, lots of ’noble’ candied fig and dito banana, even something faintly bubblegummy countered by a soft brambleberry sourishness underneath, medium carbo - on the soft side even for this style, but very pleasant, fluffy and elegant, smooth mouthfeel. Caramelly malt sweet body, filling, a tad chocolatey somewhere in the middle and a little bit toasted in the end, accentuated by a noticeable yet soft presence of drying woody tannins; a hint of sweet brown rum rises up in the finish but could just as well be a combination of the malt sweetness and alcohol, the latter effectively establishing a pleasant ’afterwarmth’ without interfering with any of the flavours; a jasmin-like, ethereal, soapy accent lingers in the background and a deeper earthy hop bitter touch brings things to balance. Another glorious beer, world class quad for sure, like the other ones in this series, though I still believe last year’s 2016/3 version - the one with partial cognac barrel ageing - was so far the best of them. I am wondering where the barrels come from, too: perhaps re-usage from La Trappe, which created the exact same concept years ago?

Ar: Banana and white peach; black pepper, star anise, and fruity coriander; sweet cracker maltiness. Ap: Deep gold and hazy; large off-white head with excellent retention, leaving a picture-perfect cap of super-airy foam and dry webs of bubbly coating on the glass sides. T: Rich pear and plum; doughy and slightly sweet, with a bit of alcohol warmth; white pepper and dried flowers; orange and banana on the finish, with a high, slightly earthy bitterness. P: Medium body with very high carbonation, prickly full foam; finish is dry. O: A classic tripel, with austere and refined quality; bright, satisfying fruit esters, with lots of spice and hops lending a delicious complexity; warming yet exceptionally drinkable, one part quaffing beer and another party sipping beer!

Had in Brugge. Best beer I had on my whole trip, in the best beer country in the world. I am not really sure how to describe the Chimay Bleue. It was just about totally flawless in every way. I am no professional reviewer, but I am a lover of stouts, porters and malts and this one is battling for the best beer I’ve ever had.

bottle from ’P&M Getränke’, bottled in February 2017. Clear, dark reddish brown with a medium large, fluffy, slowly diminishing, off-white head. Sweetish, malty, slightly fruity and a bit yeasty-spicy aroma of caramel, marzipan, vanilla, prunes, raisins and some oak. Moderately sweet, malty, slightly yeasty-spicy and a bit fruity taste of caramel, prunes, raisins, marzipan, some oak and a touch of vanilla, followed by a medium long, moderately bitter, slightly yeasty-spicy and a little warming-alcoholic finish. Thank you kraddel! 750 ml. bottle sampled @ "Adam Chandler Visiting (for real this time)" Tasting. Bottled 15/02/2017. Dark ruby amber, little tanned head. Nose is perfectly oxidized Blue Chimay, dark fruits, raisins, BE raisin, caramelized apple. Taste if faintly metallic, dark berries, raisin, caramelized apple, perfect oxidization. Body is thick, slick, well oxidized, raisin, caramel, dark banana, caramel, bit fizzy. Not really getting rum here, tastes like a perfectly aged bottle of Chimay Blue for me, rum likely has a profile too similar with the base with some added oxidation. Nice on its own right, very nice even, these remain a very expensive affair.
