Hilliard’s Murdered Out Stout
Back log On tap at the tap station west Seattle. Pours out dark brown almost black topped with a small tan head. Nose is nice coffee forward roast malts a touch of smoke and some chocolate. Taste is more of the coffee well done on the roast and a light sweetness.

Hilliard’s Amber Ale
Received a 16-oz can via trade with 5000. Pours a semi-clear brownish amber colored brew with an average sized off-white head that quickly dissipates and leaves behind some spotty lacing. Aroma of toasted caramel malt, a hint of grassy hops and some earthy spice. Taste is medium bodied, soft carbonation with flavors of multi-grain malt, grassy hops and caramel malt. Finish is semi-dry, a lingering grassy hop aftertaste followed by some caramel malt flavors. An Americanized hoppy amber ale overall.

Received a 16-oz can via trade with 5000. Pours a semi-hazy golden pale yellow colored brew with a thick and rocky white head that has some excellent retention and lacing. Aroma of saison yeast, tart white fruits, and a hint of golden grain malt. Taste is medium bodied, flavors of Belgian yeast, golden grain malt, peppercorns and hint of coriander. Finish is semi-sweet with a yeast and peppercorn with golden grain malt aftertaste. An easy neutral saison overall.

Can, undated, drunk 8/18/16 at Camp Muir, Rainier.
Didn’t pour this one out, as we had no glasses, so I’ll give it the default 4.
Smells quite citrusy, with lots of bread dough, honey, light caramel and big white pepper and pineapple qualities. It comes together quite bright, if somewhat sharp/acidic. The hops seem to add more acidity than anything else, though there’s a strong lime/grapefruit element which is actually not resinous. Pepper, grass, grain and more light caramel lingering. Hey, there’s no banana, at least...
Pretty nice texture with an engaging yeast and a malty feel to it that also shows moderately-strong attenuation. Peach, orange, white pepper, hay and bright acidity all comprise the flavor which leans to the malty side, and lightly sweet, but not too much so, really. Fruity and maybe a touch too sharp from the hop and yeast acidity combining. Strong grassiness persists with lots of pineapple, grapefruit and nectarine lingering.

Blond color clean. This smells and tastes as liquefied plastic, I’m thinking of the old plastic Christmas tree, not a single good beer quality; rather unpleasant.

Hilliard’s Saison - Bourbon Barrel (Suffering Bastard)
On tap at St. Augustine’s, pours a clear copper with a small white head. Aroma brings out a shitload of juniper berries from the gin upfront, followed by moderate bourbon, some booze and sourness. Flavour brings out lots of boozy gin upfront, followed by harsh bourbon and weird astringent sourness. Seems really messy, but is quite fun to drink. Not exactly well-constructed, but it’s decent.

At Hilliards. Clean darker brown saison, ok soapy foam. Sweet, a little spicy aroma. Almost pumpkin spiced with sweet, stinging finish. Body like a bad flemish red, oddly spritely carbonation. When I’m told there is gin botanicals, it makes more sense. Sweet, not great barrel undertones. Not great.

At Hilliards. Slight hazed yellow-gold, soapy white head. Big sweet aroma, a little tart. Dry-sweet body, odd sour malt and banana leaf. Weird flabby malt bill, ok tart-salty notes. Odd beer. Mild tequila flavor if I’m looking for it. Not a strong effort in this town.

On tap @ Hilliard’s. Pours watery brownish black with thin creamy light mocha head. Aroma is medium roasty dark chocolate malt, mine dry oaky flavor, just a hint of bourbon. Taste is clean, light-bodied roasty chocolate malt, dry finish. Light coffee and chocolate notes linger. Lots of fairly rich flavor for a lighter stout. Solid improvement on Murdered Out.

On tap @ Hilliard’s. Pours bright clear light amber with very thin white head. Aroma is big boozy oak up front, slight plum tartness, a bit of funky saison yeast on the back. Taste is light pale malt, super dry mid-palate with clear barrel and gin notes. Faint tartness on the back. Quite a bit going on here, not sure if readily identify this as a saison. Also gin barrel-aging is new to me, definitely adds a unique dry flavor. Easy drinking, seems smaller than 7.6%. Still, an interesting and tasty beer.

Hilliard’s Saison - Bourbon Barrel (Suffering Bastard)
First look smites me with the lovely bourbon color topped by a decent head. The aroma is quite complex and, even after much aeration, is constantly evolving and challenging to decipher. However, moment of of lucidity yield winey and brett notes with juniper flute bursts, twangy wheat, and anise. The flavor is a similar delightful jumble of winey malting, brett notes, juniper shivers, and wheat, all on the sweet site. A delicious, complex elixir.

Can. Pours a dark golden with a medium offwhite top. Aroma is malts and light fruity with hints of resin and pine. Taste is bitter, somewhat harsh actually. Some malty sweetness is there as well, but mostly bitter with hints of resin. Not quite convinced but it’s not bad. Medium body and co2.

The blond color is darker than in other wheat beers, just hazy. The flavor has some delicate bread quality, the aroma is delicate and hoppy, and there is some fruity hop flavor too. Elegant beer, fresh, easily drinkable, of great balance.

Can:   Almost pitch black, little khaki head and lacing.   Soft roasted malt nose, very soft.   Extremely soft on the tongue.   A little acrid roastiness on the backside.   Otherwise clean, but light.   Body and mouthfeel are moderate, but leaning to the thin side.   Comes across as very pedestrian, not much flavor other than light roasted malts, and even then a touch acrid or husky.   Meh... Needs to be a tad sweeter and certainly more body.   Too light and unassuming.

Sample at SBWF 2015. Hazy amber/orange with a small white. Fresh and hoppy with grapefruit, resin, caramel and some hints of something metallic. The body was medium and the finish bitter. Quite nice.
