Draft pour at Special Brews. 6 oz pour. Always enjoy an opportunity to try their beer, without paying a super bottle premium. Hazy golden pour with a patchy fizz head. Tart aroma, with mixed fruit. A wonderfully tart flavor with apple and white grape. Light body, very cider like. Perfect amount of tart going on here. Very cool constant. Nice apple pear finish. Very nice beer here.

Pours a hazy golden with a medium white head that leaves really good lacing. Nose is of white wine and dill. Taste is lightly tart and dry with cereals, pepper and more of the white wine. Body is medium, carbonation too and mouthfeel is lightly vinous. Quite interesting, can’t say I picked out the spruce though. Pretty good!

Propolis Beltane (2015+)
Bottle. It pours a clear golden color with a massive frothy white head. The aroma is really nice with light flowers, baked bread and light cobweb-like yeast presence. The flavor is the same with some lightly acidic/sweet white grape, baked bread and hints of bitter/phenolic brett. Very soft on the palate. The mouth feel is very smooth and slick with lower than average carbonation. A touch on the acidic/grapey side and the carbonation is a tad low for the style, but the flavor and aroma are both on point. Very nice.

Draft pour at Hop and Hound. As with all Propolis beers, I’m hesitant to pay the super premium for a bottle. Unless it’s a Sahti, and in haven’t had one yet. No longer the case, I try the affordable half draft instead. This is a much less eventful try than some previous raters. My story is that I randomly ended up here on a Monday after work. My tasting experience on nettles is extremely limited. Aroma seems spicy. Flavor seems floral. Overall seems weird. Dry finish. Malty. Oak? Honey? I don’t know what to think here. Very different. Strange to say the least.

Tap at the Watershed.

I done fucked up. I even ordered a taster because I was skeptical, but the taster seemed so interesting that I ordered a glass. About 5 sips in, I was not at all sure I’d be able to finish. Dark pour, herbal aroma, somewhat sweet, basically riccola cough drops or something in liquid form. Thick and sticky and sweet for a dubbel.

Propolis Cedar (2015 Wild Series)
Bottle. Honey orange. Dusty, sweet grains on the nose. Flavor intensifies the sweetness, and brings a low, lingering tartness. Effervescent, which helps keep it from being cloying. Would love more cedar - that’s really, really subdued in here - and would love it to be a bit drier. Good though. Refined.

Propolis Spruce (2015+)
8oz draft at Chuck’s. Maybe these beers are just not good on tap. Another disappointing Prop beer. Murky, dirty, headless, dark golden body. A muddled beer, spruce isn’t strong or not as strong as I want it to be. Mainly a toasted malt Saison, an actual Saison as opposed to the common crap. Has actual rustic saison character but is bogged down by lack of sharpness and a messy malt soupiness. Low esters, light lemon. A bit of an Hernan character but I’d never know it’s spruce.

My Bottom Line:
Honeyed hay, peppery spiciness, dandelions and herbal bitterness intertwine in this captivating farmhouse brew.

Further Personal Perceptions:
-A healthy head of foam covers the misty blond opacity.
-Mouthfeel is pleasantly dry and airy.
-The dosage is perfect on all flavor contributors. Great balance throughout.
-Elderflowers blend in beautifully, evoking dandelions, white grapes and all sorts of summery beauty.
-This is a wonderful introduction to this brewery! Need to get to know them better.

Bottle.

I just had a kid about 19 hours ago. To celebrate my wife’s awesome work and sobriety for close to a year, I went to Chucks to pick her up a Blvd Saison-Brett. Fortunately they have the 2014, batch which is even better. Of course, I had to grab a beer since I am here. So, I went with the most special beer on tap. This is the 2016 version. As per all the other propolis beers, it’s not as good as I want it to be. It’s a bit cidery. I’m not sure what nettles taste like but I may like his novel flavor I’m getting. its not bretty but apple juice sour. A little poop. Lighter beer. Was the base a dubbel? I wouldn’t be able to tell. Murky Lipton tea color. Should have drank something a bit more special for the first beer after a kid. Probably the Blvd sometime soon with the wifey. Let’s make believe I drank that first and this second.

Pours a lightly hazy golden with a small white head that leaves some lacing. Nose is of herbs (fennel?) and generally spicy. Taste is lightly tart and fruity with some light crisp cereals. The fennel is well-integrated to me and adds a nice subtle twist. Pretty dry. Average body and carbonation. A nice fruity saison, I’d certainly drink that one again!
