Amazing aroma full of blueberries, some strawberries, oak, funk, wine, light marzipan hint, spicy note. Batch #3. Pretty much the perfect table saison -- light, effervescent, and full of flavor, especially for 4%. There’s a lot of character from the yeast and the wine barrel aging, giving it wine and cider notes that add a lot of complexity. Right up there with some of the very best barrel-aged saisons from SARA and Hill Farmstead.

Side Project Unlabeled Blend #3
375 ml bottle at the Side Project Cellar. Pours a pretty cloudy lighter gold color with a small white head that settles into a ring. Loads of fruit character in here, although I could probably be fooled that this is a peach-nectarine-apricot deal. Regardless, stone fruits lead the way, with kiwi and melon, oak, vanilla, sweet dough, and some acidity. Light-medium bodied, with moderate carbonation and a sweet, acetic, fruity mouthfeel in really nice balance. Pretty soft without sacrificing acidity. This one has been available at the SPC for a few months without much fanfare, which worked out great for me. It should have a lot more fuss, though, because it’s outstanding. Best of the series so far.

Bottle from my buddy Vince, thanks man!!!! Hung onto this for a while. Pours orange with a soft white head. Funk and wine dominate the nose. Taste is light sour, brett, wine barrel. Flavors blend seamlessly. Incredibly easy to drink. This is about as good as a saison gets for me.

Very dark, homogeneous color. The aroma volume is lush, with scents of coffee and dark roasted chocolate that dominate, small hints of wood spice, berry fruit, vanilla, green pepper. Very little alcohol. The feel is thick and creamy, a definite positive. This was a tasting event beer and we tried several world class beer in a very long flight and this was my standout favorite. Excellent.

Bottle... This beer rocks!… Pours murky and brown with no head. The aroma is a voluptuous marriage of chocolate-covered sour cherries and caramel. Medium to full-bodied with feather-soft carbonation. The flavor is sour and fruity with limited toastiness. Loaded with cherries and acute acidity. Short, crisp, citric finish. This world-class beer was provided by landhoney!

Bottle... This beer rocks!... Murky caramel-colored pour with a brief white head. The aroma features big-time raspberries, but I’m picking up no plum. There is light funkiness here as well. A fantastic, fruity, funky olfactory delight. Medium-bodied with vibrant carbonation. The flavor is sour and fruity - citric and lemony, but also loaded with heaps of red raspberries. Lengthy, sour, fruity finish. Major kudos to 50belair for sharing this world-class beer!

Not an improvement to the regular du ble

Bottle shared during Marks’ 4K tasting, and last dutch whale share. shared together with blend 1 and 4. Well where to start here, poured deep pitch black with a slight caramel shade on top. The aroma just fills the room with a amazing rye whisky spirit, deep dark chocolate, lot’s of sweet caramel, dark roasted malts, chocolate spiced rye, light vanilla oak, toffee, chocolate fudge, chocolate chip, amazing subtle rye whisky barrel. Such a mellow and delicate taste, lot’s of spiced whisky notes without getting overpowered. The most full bodied mouthfeel of the three versions we have tried. By far on my top two non adjunct barrel stouts. Amazing

Bottles at Shelton Bros The Festival (version #2). Head is small, mostly diminishing. Body is hazy medium yellow. Aroma is lightly malty (toasted grain), lightly hoppy (flowers, herbs), with notes of band aid, sour apple, oak, lemon zest. Flavor is moderately sweet, moderately acidic, lightly bitter. Finish is lightly sweet, moderately acidic, moderately bitter. Light to medium body, watery texture, lively carbonation, moderately astringent. The nose is kinda Helios-like, which is nifty, although it ends up being sour in the mouth like every other American "saison" these days. Fairly astringent as well. Has some promise though.
