Usually don’t like to let coffee stouts sit around but this has been fridged for a long time. Pleasant, not overpowering coffee nose, pours a touch thin looking. Doesn’t taste it - not overly roasty but bitter, still has a lot of nice coffee flavor. Gonna have to restock on a few of these.

Bottle from Dranken Geers in Ghent. Pours opaque very dark brown with a nice chocolatey creamy tan head which dissipates to the edges after a couple of minutes. Nose is big milky chocolate, fresh lactic milkiness, creamy, roasted malt, lots of vanilla, very subtle bourbon, hot chocolate powder., little bit of black coffee Taste is big milky chocolate, roasted malt, cocoa powder, cold hot chocolate, vanilla, syrupy chocolate, black coffee.

AIBF2016. Blackish brown pour with a small beige head. Beautiful Hill Farmstead/Anchorage-esque fruity brett nose. Heavy yellow tropical fruits and dusty barnyard. Light roast and bready malts. Kumquats and citrus zest. Light sweet and sour taste. Soft round tart mouthfeel. Beautiful sour with very pleasant fruity funk and balanced tartness.

Keg Half Pint at BrewDog, Clapham, London in Dec 2015 - Very Dark Brown / Black in colour. Thick foamy beige head. Excellent lacing. Aroma of chocolate, coffee and vanilla. Very Malty; roasty malts, lots of dark chocolate and coffee, caramel, nice vanilla, wood notes. Fruity; some dark fruits. Hoppy; balancing hop bitterness. Good malt/fruit/hop balance. Sweetish roast chocolate and coffee malty throughout. Enjoyed this a lot. Terrific Stout! (2015-12-16)

Dieu du Ciel Aphrodisiaque
Pours effectively black, slight cola head with nice mocha lace. Aroma has the usual coffee and chocolate notes at the forefront, then the smooth vanilla and dessert chocolate kicks in the middle. There’s a floral note mixed in as well so it doesn’t come across as syrupy. Taste is just freaking awesome. Roasted coffee foundation stays throughout each sip - well balanced vanilla, milk chocolate and dark chocolate. A little bit of a toasty hop finish rounds it all out. The palate, while somewhat creamy, has a bit more of a soda character than I’d like, which is the only true negative I can think of. Even so, this is top-tier and I’d buy this at every opportunity I could.

Dieu du Ciel Solstice d’Été aux Framboises
My first sour beer and first sour certainly brewed with raspberries. Pours with a thin, dissipating head a beautiful cherry color. Quite striking. I am not a fan of fruit infused beers so I find myself unexpectedly intrigued by this. Has a nose of tart red fruit and pucker if that’s possible, and an earthy going to musty fruit decaying type of nose I can’t quite place, but it reminds me of being beneath my grandfathers trellis with rotting grapes and raspberries as a child. Something else going on as well like cough drops or menthol. The palate is astringent, fresh and clean but acidic and bitter. Could see me drinking this on a summer day. This is NOT my style of beer, but I’m enjoying more than I thought I could.

Dieu du Ciel Isseki Nicho
As I’m drinking it I wonder if this is my favourite beer to this day. The aroma is simply brutal: yeasty, roasty and slightly floral with so many notes it’s hard to separate them, since they merge perfectly. Looks a perfect brownish black with a persistent tan head, not too thick and not too thin. The taste is surprisingly strong and perfectly described in the label: "Imperial dark Saison with dominant bitterness, roasted malt notes and a dry, complex and spicy finish". I would add there’s a lot of umami too (as if I knew what that is...). Only objection for me - and quite personal - is that it’s too carbonated, although in the vein of most saisons. Truly outstanding beer to enjoy without hurry.

Draught @ Rogue(Waterfront). Pours black with a tiny tan head. Nose is ample vanilla mixed with dark chocolate. Flavour is much of the same, again with ample vanilla that isn’t overpowering as it works well with the dark chocolate. Bitterness is held mostly at bay while not coming off over the top sweet. Bourbon is quite muted, if its even there. That aside, this is a very smooth stout that goes down well.

Pours ruby red, almost brownish, with little tan foam. Aroma is alcohol, phenolic, wood, sort of rancid dark fruits. Flavour is phenolic, alcohol, wood, lot of astringency, spices with a bitter dry finish. Medium body. Oily texture. Really disappointed by this one. Quite undrinkable.

Pours cloudy dark rose red color with no head, some sediment floats around. Very strong raspberry, hides all the wheat notes, some gooseberry bush and grapefruits follow. Flavor is also mostly tart raspberries, some grapefruits, mild rose hip and some faint blood orange. Tasty fruity palate, short dry finish.

341ml bottle thanks to Julien. Pours oily black, dark brown mocha, long lasting head leaving a nice lacing on the rim of your glass. Smells nice strong roast coffee bean, dark chocolate, and sweet cookie, vanilla scent. Tastes like straight roast coffee. Very strong not much else to it. A little bit of dark chocolate sweetness but that’s it. Very good flavor but not complex at all. Very straight forward. Medium to full body, great aftertaste of espresso coffee and great carbonation. Very good.

Tap at Clubhouse BFD. Pours murky brown, tan head. Aroma is fig, raisin, plum, dark fruit, esters, toffee, sweet. Flavor is plums, figs, raisins, aspirin astringency in the middle of the mouth fades into the finish with a bit more astringency that isn’t good. Slightly oxidized note. Ehh. Not great.

On tap with dinner at The Trappe Door. Really good but I might be somewhat biased. Light with herbal and citrus notes. The juniper somehow really works with this yeast strain. Somewhat spicy and distinct grass notes. Haven’t been disappointed by this brewery yet.

Black with a small creamy tan head. Aroma is fruity coffee with some dark berry notes, hints of grapes, toffee, oak, brandy, cognac, cocoa, ash, some ink notes and light spiciness, vanilla. Tastes is medium sweet, malty smooth bitter coffee notes and light warming. Medium to full bodied, smooth texture, soft to average carbonation. Finish is light fruity and warming brandy/cognac with a light vinous grape character, smooth bitter and creamy roasted coffee notes.
Nice one, smooth coffee notes with a slightly boozy vinous character.

Part of their Dernière Volonté Anthologie 4-pack mixer. Pours a cloudy golden-amber colour with lots of particles floating all around. The foamy head is big, stays long and lacing is thick and dirty. The Brett yeast in this one does not smell as sour, but more on the plastic side. Fruity malts in the background. The taste as well has this plastic flavour with light fruit. Seems like the hops that are off in this one for me. After having their Hérétique wild ale (in the same pack) which was pretty good, this one is kind of a disappointment.

Part of their Dernière Volonté Anthologie 4-pack mixer. Hazy light golden colour with Champagne-like bubbles, a warm cap that stays quite a while with foamy lacing. Sour nose with the Brett and some mild sweetness from the Belgian Ale yeast. The taste is not really sour though, with more of the grassy hops showing. You can taste the Brett in the background, but a nice light bitterness creates a light dryness. Seems like the sourness disappears with time and fruity malts appear. A real interesting funky wild ale.

Dieu du Ciel Déesse Nocturne
On tap at DDC St-Jerome. This is a simple light black beer, well balanced with a surprisingly complex taste constituted in part with a nice subtle cocoa touch. I think it is a more "general purposes" black beer from DDC. It is lighter than most others black beers, and is not given up a lot as a compromise. In fact, I just enjoy it more because of that.

On tap at DDC St-Jerome. It was among the first beers I had from DDC. Being a coffee drinker, I enjoyed this beer very much. It’s a rich strong black beer with that nice coffee taste, quite rich and complex. I just realized with time that I prefer lighter beers. I can appreciate its greatness anyway.

On tap at DDC St-Jerome. This is a simple blonde beer, or what you may find as the closest to that at DDC. By that I mean a light beer, with a fresh taste, a bit fruity/citrus and with a small amount of bitterness. Nothing fancy, just a nicely tasting little blonde beer.

Dieu du Ciel Rosée d’Hibiscus
On tap at DDC St-Jerome. I’ve seen this beer many times and with its pinking look, I knew at one point i’ll have to try it. It’s very attractive an different ot others. I felt a taste somewhere between a mixed floral and light small berries, with a nice well balanced acidity. Even with its pinky look, it might be considered a white beer. As such I compared it to the "Blanche du Paradis" and enjoyed the Rosée d’Hibiscus more. Maybe that may sound like a stereotype, if I’m going to DDC with a woman, I may recommend the Rosée highly to her. For a deeper fruity/berry taste, go with the Solstice d’été aux Framboises. You just have plenty of choices depending on your taste or the context of your visit.

Dieu du Ciel Dernière Volonté
On tap at DDC St-Jerome. Lets be honest. This beer used to be among the best and an incredible one. Few years ago, DDC had issues with the procurement of the yeast and it had never been the same when they reintroduced it with apparently a new recipe to accommodate a different yeast. I even had the impression they may have changed the recipe more than once in trying to achieve something satisfying. The beer is still good, but no longer the exceptional one it used to be few years ago!

Dieu du Ciel Gaélique
On tap at DDC St-Jerome. This is my favorite beer from the many DDC beers I’ve tasted so far. The lovely nitro foam, the sweet (rosted) malt, light caramelized taste. I have to honestly reveal I’m enjoying that beer in a larger size glass than my regular one and I’m almost jumping in the air when I see this beer written on the board as being available on the premises. I feel it is an underdog beer among DDC customers.

On tap at DDC St-Jerome. I had that beer few times during last summer. It is refreshing with a deep fruity/berry taste. Whether there is sun or not, on the terrasse or not, a nice experience to enjoy. I love the very generous fruity aspect while being very balanced. BTW I would definitely recommend this one over the cherry version, the raspberry is the reference at DDC according to me for this kind of beer.

Flaska från SB. Drygt ett år gammal. Mörk mahogny/rubinröd med försvinnande skum. Doft av russin, torkad frukt, sirap, kandisocker, lite bärigt och nötigt. Något större kropp. Nötig i smaken, lite brända toner. Snäll beska och lite torr avslutningen. Helt ok.

Dieu du Ciel Genèse Triple Abricot
Picked up a bottle at Marché Omni. Pours a thick frothy eggshell coloured head and has a cloudy orangey appearance. Nice dirty lacing. Aromas are quite fruity, tropical fruits and apricot are most apparent. Flavours are definitely of apricot, almost immediately. A little bit tangy, some oranges, hints of mangos. Has a little bit of tarty finish on the palate. Medium bodied mouthfeel. Can barely tell this is a 9%abv beer. Goes down quite well.
