Dassai Junmai Daiginjo 2 Wari 3 Bu Sake
Bottle. Light yellow hue to it, flat. Super fruity and clean rice sweetness. Pear, melon, light booze. Tastes super smooth, alcohol is well hidden, really easy to drink. Well, that's quite understandable for as low polishing rate as 23. Light booze bitterness, fruity overall sweetness defining the body. Really easy to drink, if people tried this as their first sake, I think impressions about this beverage would be radically different. Rice vodka? No way.

Dassai (Otter Festival) 50
375mL at Yakitori Taisho San Diego, CA. Clear, thicker liquid into the sake cup. This one is super smooth in the front palate and finish. Just a tad rough in the mid-palate. No alcohol presence. Ultra-clean and nuanced requiring, as usual, pairing with food. In this case, it helps cut through the fat from the grilled meat skewers. So overall, very good, but not outstanding.

720 ml bottle. Big nose or rice, peaches, melon, oranges, spices. Crisp and fruity flavor, huge fruit, quite full body for such a high polishing ratio. Nice rice, awesome fruit, not as light as expected, peppery. Great stuff, though maybe not so much better than the 50 to justify double the price.

Dassai Junmai Daiginjo 39 Sake
I cannot get as complex and specific as the guys below. My brute senses tell me that this sake, now famous after PM Abe gave a bottle to Obama, is one of the smoothest ones ever. The aroma is fruity and crisp, and the flavor is fruity, a touch of sweetness and ultra smooth. Super round, well crafted drink. One of those to be taken at any temperature, specially room temperature.

Bottle from Yamamoto. 720 ml. Another one from Dassai using rice that comes from lesser grade territories, and thus very inexpensive for a 30% junmai daiginjo. Still, it is all Yamadanishiki from Hyogo Prefecture. Huge floral and fruity nose. Apple, peach, rice, touch of vanilla. Clear and oily. Crisp and light, great fruit, somewhat sweet, creamy, orange, peach, rice pudding. Lovely.

At hibachi with coworkers. Not the clearest pour for style. Nose is decent fruit. Tastes of honey dew, green apple, pear, little vanilla bean. Touch or harshness on palate not quite as smooth a daiginjo as you’d like. Still quite tasty.

Dassai Nigori Junmai Daiginjo 50 Sake
From Ootoya in NYC Listed as Dassai Nigori Yamaguchi. It’s description "This one is rich, milky and full of apples and melons on the palate" Pours light white with some milky brown in their also. Looks a bit like Korean rice wine. Smell is of fruits, more melon than apple, along with light almond, and light alcohol. Taste is similar. It’s quite complex and not super pricey. Very nice

Pours as mostly clear water so appearance is funny to rate. Aroma of sweet fruit as well as citrus and some light rice. Sweet with a very light alcoholic backbone. Would be a good introduction to Daiginjo as it is a good mix of flavor, not super citrus-y or sweet. Excellent.

Bottle 300 ml thanks to Ingo! Sampled on May 3, 2015.
Where the only text I understood was "Dassai 23", also something like 23% and the number 16, guessing the ABV?
Could also see a web address for asahishunzo.ne.jp on the label.
Light purple paper cover over the neck, tied with some purple string as well. This bottle had sat in Ingo’s fridge for about one year, and since I’ve understood sake should drink fresh, we were not expecting much whn this was opened.
Pours very clear pale birch sap color, almost completely colorless, or towards water. No head but generous thick legs pointing towards a high alcohol content. Fantastic fresh lychee, Japaneese pear, fruity scent. Sweet, alcohol, Japaneese pear taste. Rather dry bitter alcohol finish. Full mouthfeel. Much warming alcohol.
Very nice drink!
Has held up really well and could possibly be the best sake I’ve yet to sample.

I’ve drunk numerous sakes, first time rating. not sure how to rate appearance and palate. The dassai 23 has exceptionally low proportion of the rice remaining. ????23%?this makes it incredibly smooth and drinkable ????? but perhaps with less aroma and character than their not quite as smooth 50 daiginjo. nevertheless this is a great sake.

Dassai 2 Wari 3 Bu Enshin Bunri Origarami Gantan Todoke Sake
The centrifugally-filtered lightly nigori version of this daiginjo. Glass at Jam. Lightly cloudy. Lemony nose, milky, lactic, yogurt, minerals, vanilla, almost perfume but in a good way. Lemony rice flavor, fruity, oily, silky. Light but full. It has an ethereal lightness from the super-high polish (23%), but the yeast in it seems to give it a fullness that the regular version lacks, making it more weighty and, I think, better. Great.

Bottle. A- Slightly sweet, soft green apples, alcohol. A- White color, clear liquid, no head. T- Melons, green apple, dry, crisp, alcohol, slightly sweet. P- Light body, thin texture, average carbonation, sharp finish, O- The best sake I’ve had but really doesn’t taste much different from any other. A little drier and less alcohol burn but certainly not worth the $100/bottle price.

Sake flight sampled at Sakagura with Linh and Zahra. Pours a clear, still body. Doesn’t really deviate too far from the standard sake in my mind; notes of grassy fresh melon, rice, wine, alcohol and maybe some faint additional fruits in the back. A bit too hot for my personal preference, but not awful.

Sake flight at Sakagura with Linh and Zahra. Pours a clear white body with light cloudiness. Aroma is rice and burning alcohol. This was definitly on the more aggressive side in comparison to the other 7 we sampled with the grain alcohol character at the forefront of the palate. Additional flavor of rice and melon in the way back hiding behind the alcohol.

Saki Flight sampled at Sakegura with Linh and Zahra. Clear body with light cloudy haze. Aroma is fresh fruit - peaches, strawberries and melon. Alcohol on the nose as well, but not as aggressive as some of the other sakes we tried along side this one. Flavors include rice wine, vanilla, wonderful combination of fruit and alcohol. This sake seemed to be a bit more delicate with the fruit character and alcohol playing together well.

Bottle at T&M’s sake and bukakke fest. Pours a clear almost colourless. Sweet with aromas of marzipan. Also hints of vanilla. Very nice and mild. Medium to light bodied. Hints of white pepper and alcohol towards the finish. Light dry finish with more vanilla.

Note: Non-sparkling.

Bottle sampled at Astor Wines. Stemmy wine glass.
Pours a milky, grey sort of whitewash. Almost paint-like.
Smell is subtle & reminiscent of rice pudding(starchy). Laced with apple acidity, coconut oil, & just a smidge of bitter melon.
The taste just builds on that. Mellow, almond milk-like sweetness. Hints of restrained apple, banana, & pineapple steeped in said milk. Soft herbal bitters gently baked into sticky rice. A mild, yeasty finish.
Texture is absolutely soft & creamy. Well, well below what I would describe as heavy or thick.
Yum. :)

Tasting at Astor Wines. Just called "Dassai 23" in ’Merica. I had to put on the puppy dog eyes for this one after it "ran out".
Pretty purple paper neck wrap. Sake was clear & still.
Super subtle, a little disappointing. Similar profile to the 39, but just more airy & delicate(re:restrained). Maybe more banana then apple this time, and definitely no where near as hot. Earthy yeast.
Flavor is tiptoeing apple acidity & powdered sugar dusted pineapple sweetness. Just a twinge of complimenting bitterness that is very neutral. Light to moderate starch. A little watery, yet slick.
I trust what I can taste & smell, but I probably took too big a baby step with this one.

Sampled at Astor Wines. Stemmy wine glass. Pretty Japanese women of proper childbearing age.
Thin, murky almond/coconut milk consistency. Short soda fizzle.
Scent of apples, bitter orange, licorice, clay.
White grapes, grapefruit. More tart then acidic. A bitterness, more fruity like tarragon then anise. Had sort of a stiff mimosa quality to it.
Short, popping carbonation. Starchy. Yeasty. Short alcohol.
Tall glasses of this in the morning seem quite appropriate.

Clear. with just barely a yellow tint to it.
Scent is a touch sharp, hot, & fruity, with more pineapple then banana or apple.
Flavor is more of a mixed bag. Apple acidity, light on the pineapple. Just a twinge of green bitterness. Starchy, boozy finish.
This one was pretty popular with the tasting group. No comprende.

700 ml bottle from Yamamoto. Chilled. Clear, icy looking. Herbal nose with cedar, pepper, peaches. Nice but not quite as fragrant as I had hoped. Full rounded body. Silky smooth and nearly perfect. Very fruity flavor, estery, peaches, melon, persimmons, pepper. Spicy and tasty. Long, tingly aftertaste. Very delicious. Not so different from their regular 50, but a bit fresher.
