Bottle pour at The Sycamore. Malty semisweet aroma, flourless chocolate cake, mild spirit notes. Flavor is disjointed, heavy bready wheaty malt without the smooth chocolate and oak I expect from a 3-4-year-old bourbon barrel aged beer. Carbonation is also coarse and distracting.

FiftyFifty Imperial Eclipse Stout - 30 Year Spanish Rum Barrel
From bottle to snifter. Cellared two years. Pours near jet black with minimal tan head. Aroma and flavor are both peaty at first. Started to fade the more it warmed, and the chocolate and coffee aspects became more pronounced. This is the second Eclipse that I have aged over 2 years that seems to pick up some peat. Wondering if that is due to an off flavor arriving after a lot of age, or from the barrel (the other was a High West Single Malt). Through the pour this became mellower.

Tight foamy head. Sweet apple characteristic in flavor. Surprisingly light aroma. I could sit back and sip this one for a long time. Not you usual flavors for a barrel aged beer.

At Sycamore. Very strong vanilla, some milky chocolate and coffee behind. Still powerful and full of vanilla on the tongue, but not sticky at all, rather like a chocolate milk. Great balance. Almost easy and light, I mean, relatively speaking. Very impressive!

At Sycamore. Reminds me of coke. The soft drink, that is. Still vanilla and honey, but a healthy dose of coke and lemon as well, especially on the tongue. Lighter because of that, and not as boozy. Very good.

At Sycamore, vintage 2016. Aroma is more dark and overripe fruit, raisin, dried fruit, less wood. Lighter in body, still boozy, but much much less. More honey character, too. One that I like rather more than many others.

22oz bottle, 2015 vintage, deep dark black color, with a dark tan-coloured head, with a very nice mild chocolatey, light mochaish, coffee nose with some sweet roasted, chocolate, black, toasted, wheat, oat malty, faint molasses accents, and a semi-sweet chocolate baking bar, faint vanilla burnt oak barrel, chocolate cup filled with cognac note in the aroma follows through the on a medium-bodied palate with a smooth warmth sweet roasted, chocolate, black, toasted, oat malty, chocolatey, brownie character, with some mild coffee, mocha, chocolate chip cookie dough, burnt toast, chocolate cup filled with cognac, burnt chocolate pie crust, chocolate bran muffin, subtle flowery leafy hop, leading towards a warning sweet chocolatey cognac, burnt vanilla oak barrel, lingering fruity roasted, chocolate, black, toasted, oat maltiness, faint bitter coffee finish.

Pour a half finger of tan head on a black body. Aroma is a little boozy, lots of wood, burnt wood, chocolate, caramel candy and Irish coffee. Taste has a black coffee undercurrent, some dark chocolate sweet, alcohol heat at the end. Fairly easy to drink. Texture is smooth.

Bottle. Pours black with an amazing tan head. I mean this thing lasts, and even left a good foam layer and lacing after I came back from changing my daughter’s poopy diaper. Great aroma, bourbon, dark chocolate, roast, toasted coconut, oak. Excellent flavor, medium sweet, good coconut, not too hot, medium bitterness at the end. The palate is really nice, as is typical for Eclipse. Full but not too full, higher carbonation for the style. Really nice!

FiftyFifty Imperial Eclipse Stout - Maple
Poured from a 22 oz beer. Aroma is classic eclipse with lots of chocolate and light roast with hints of honey. Light oak notes. Maple is light but becomes a bit more pronounced as it warms. Pours black with a medium sized, fairly thick and creamy, light mocha head that shows really nice retention as it slowly recedes to a thin film that lingers on the edges and in the center. Light lacing and moderate length legs. Flavor is rather sweet with lots of chocolate with some dark chocolate. Some light roast notes with light honey and caramel. Medium light maple notes. Medium bitterness with some light oak notes. Hints of alcohol spice. Mouthfeel is medium full bodied and slightly silky with medium carbonation. Low astringency and medium low alcohol warmth. Overall, a nice beer but a bit more maple would make it an amazing beer. It’s classic eclipse with chocolate, honey and oak. The mouthfeel has gotten much better in the past couple years and continued with this year.

Bottle, shared by TvM at game night. Viscous near black pour with a dense brown head. Very rich, with dark chocolate and spicy woody notes dominating the palate, undertones of coconut, figs, cream, cigarbox, and licorice are all discernable. Wonderfully complex and full bodied, warming but not harsh. Worthy of a Grand Cru status.

FiftyFifty Imperial Eclipse Stout - Apple Brandy Barrel
Bomber from Craft Beer Kings. Pours dark brn/blk with a large tan head. Aroma of chocolate and smooth dark malt, and I think some seeded fruit is trying to assert its presence. Full bodied. Flavor is chocolate, wood, smooth dark malt, and I really think I get a "Calvados" aspect. Very mild heat. It’s a subtle and tasty devil.
