Olivier Duthoit, brewer : "My wishes for this beer were first, humbly to create a relatively "classical" IPA but I wanted to give it a personal touch, rather eccentric. The idea I had was to brew this beer with a variety of Amercan hop barely used in France: Zeus! After long thoughts, I decided to make a bet on innovation. With the complicity of Cedric Legrand, gourmet chef, I extracted the variety of hop Simcoe with liquid nitrogen, aiming to get the maximum aroma and essential oil. Hopping should surprise. My ambition was to marry the bitterness of a "traditional" IPA and in the same time, to preserve a French know-how. This is why I also used in the recipe some local hops and fresh yeast, Belgian type, in order to better harmonize and balance this beer".
