Next up on our rolling homebrewer competition tap is Berliner Weisse, brewed by Eric Lowe of the Austin Zealots. A Berliner Weisse is a traditional sour wheat beer of Northern Germany. This beer is brewed using German Pilsner malt, wheat and Hallertauer hops in the mash. The fermentation was carried out not by a typical brewer’s yeast, but by a blend of wild yeast and lactic acid producing bacteria giving it a noticeably tart and crisp flavor that mixes well with a warm summer day.
