This elderberry mead is off-dry, with a vibrant honey character. We use three quarters of a pound of organic elderberries per bottle, and only pure raw northern honey for fermentation. Elderberries are native to Vermont and Quebec and are used medicinally to support the immune system. The wine is fermented dry, aged in stainless steel for a year, and has a small touch of honey added just before bottling for roundness.
