Normandy varietal cider made from Gros OEillet apples. The cider results from apples harvested from our own orchards. No added sugar, preservative or yeast, naturally sparking.
Made in the modern French factory manner with added fungal pectin methyl esterase and calcium to induce a keeve, followed by nitrogen flotation, then a slow wild yeast fermentation in refrigerated tanks, followed by centrifugation to remove most of the yeast and a final step in a pressure tank so the natural CO2 can be filled into the bottle with the cider under counterpressure. It's then been pasteurised in the bottle.
