Developed and brewed by Sam Corbeil (Sawdust City) and Ryan Morrow (Nickel Brook), this year’s version of 11.05 is a Belgian-style Triple finished with Brettanomyces Bruxellensis – and as with all 11.05 beers, it’s 11% abv. Two batches of the beer were brewed; one on August 31st, and the other in mid-September. The first was pitched with Brett after initial fermentation and aged in the conditioning tank, and will be released exclusively in kegs. The second batch was fermented with just the primary yeast, and then packaged in cans with Brett added.
