5 Seasons Westside Europe '72

5 Seasons Westside
Atlanta, Georgia
Beer style: Belgian Ale - Strong Pale
Ref: ratebeer.com May2024

Common descriptors are
Vintage 8.5.09

We took our 1972 Begian-style ale and aged it in a pinot noir wine barrel used in both France and California. 1972 was part of our Serenade Series, where we conceive of a beer, brew it, ferment it and condition it to the sounds of a particular musician. For 1972 we played the entire Grateful Dead’s 1972 tour (their zenith)! And this version is named after the live album from that tour.

It’s made with toasted hemp seeds, smoked hops, a special malt that has an almost sourdough character (they were from San Francisco) and we duplicated the Marin County, CA water profile. It has a deep brown color and was fermented with a Belgian Trappist yeast which produces raisin, plum and berry notes in addition to a mysterious spiciness. This beer – like the music of the Grateful Dead – defies any particular style.

The barrel conditioning adds even more layers of complexity to this already crazy beer as it takes on the oak and pinot noir.

Grain: floor-malted Maris Otter, Wheat malt, Rye, Special Roast, Aromatic, Caravienna, Chocolate malt

Hops: Cascade, Willamette, East Kent Golding

OG: 18.5 Plato
