To put a local foot print on this Iowa farmhouse ale, a local ingredient is used-sweet corn. Not only is the finest quality malted barley used but, the corn stalk, full of sugar and flavor, is incorporated as well. This beer has a golden corn yellow glow and is balanced with the addition of hops. Belgian yeast is added to bring out some fruity aromas and earthy flavors which complement the flavors introduced by the corn stalks. Then, we tucked it in an oak barrel with Brettanomyces for a year, resulting in a strong horsey or earthy tone and plenty of oak.
