This is a rare, special beer. Optic is a variety of barley, grown in Aberdeenshire, Scotland on the family farm of Sheena Cook Kopman (one of our co-founders, Dan, is her husband). The barley was grown and malted in Scotland, and shipped here for us to brew some unique beers. The hops are all from France, which helps celebrate the Auld Alliance.
