We worked in collaboration with Hayley from The Window Coffee Shop, Norwich’s finest coffee shop,and the best female barista in the UK. Over a series of chats and tastings, we decided that we didn’t want to produce the typical coffee beer – the dark,rich roasted styles – but something a little different. We used lots of the El Salvador coffee in the brew, ground just a couple of hours before it was added. The coffee is light and delicate, with flavours and aromas of sweet orange and pomegranate with a creamy finish. It’s a bright acidic washed coffee, not something that you come across every day. We selected pale malts for the brew,wanting the flavour and aromas of the hops and coffee to speak out, and not be overwhelmed. The hops were Kiwi ones, with zesty and peppery aromas and flavours.
