This recipe is a creative twist on the classic California Common, or Steam Beer, which is traditionally fermented with lager yeast at higher temperatures closer to those used in ale fermentation. These higher temperatures lead to the yeast releasing fruity esters. The classic California Common tends to be medium bodied and light amber in color, which a focus on malty flavors. This Common, however, is paler in color and lighter bodied, with a focus on the hops, which add a moderate citrusy flavor and aroma to compliment the fruity esters from the yeast and the sweetness derived from honey malts in the recipe.
