Red Duck RA #2 is a unique ale, made from spelt, oats, wheat and barley, as well as a lot of raisins, sultanas and a small amount of dried orange peel and a sprinkling of spices. No hops were used.
There are no other beers in the world like this, as this is the only beer that has ever been made using our own sourdough yeast. The yeast was propagated from a bottle of our first RA, made about 2 years ago and lovingly nurtured.
Fed on a big, sticky wet mixture of grains and then added to an even bigger, wet, sticky coarse dough. This is an ale that has been made based on the theory that ancient bread beers were not made from bread that had been fired in an oven. That would have destroyed the yeast, so fermentation into beer later wouldn’t have been possible. Instead, we believe that the dough was made into loaves, then just dried and stored, Rehydrated later on when a beer was needed, a spontaneous fermentation would have happened. The strength and type of beer would have varied, depending on the original dough, and how much water was used to rehydrate the dried loaves.
We have made a light coloured ale, strong with some added flavours from the fruit. Red Duck RA #2 is a unique, rich and amazing experience. There are complex flavours that evoke, ale, wine and sherry. RA #2 has a naturally soft tartness from the yeast, and an incredible range of other flavours... worthy of an offering to a God...
