Common descriptors are Candy-like caramalt complexity with subtle fruit and wine on top of a solid oak tannin foundation. We brewed a malt bomb of a red after Woodcut No. 3 and Pedio Barleywine. Then we aged it in red wine barrels to pull out the fruit and mellow the rough edges- then we gave it a brief dry-hop with whole leaf Simcoe and Centennial. |
