The group created a recipe for a 4.5% abv oaked ruby ale. They also wanted to add some subtle spice notes to add extra interest and seasonal flavours to complement the warm flavours of the oak. A selection of malts – Pale Ale, Chocolate, Cara and Crystal Rye – created a malty base with fresh yet rich flavours. They deployed an exciting blend of hops – Fuggles, First Gold, Summer and Galaxy and also added some interesting and distinctive spices to the hop vessels – toasted oak chips and cassia bark.
