American microbreweries have reinvented and reshaped the style, but the “soul of the Irish Red Ale is still, and always will be, Irish!” The newest Cottonwood brew has a deep ruby color reflecting the dominant caramel malt taste profile. “Irish” is brewed an extra two hours in the kettle which brings out the roasted malt taste, an almost a toasted overtone.
