This is an interesting ale. First, we put in a bunch of hops--enough to take this beer to over 100 IBUs. That is whack in anyone’s book. How we got the hops in there is another story.

We add hops at every stage of the brewing process. A quick primer on the process:

THE MASH: That’s where we take the malt and convert the grain starches into sugar, using our mash tun.

THE GRANT: We run the resulting sweet liquid, wort, through the grant on the way to the brew kettle.

THE BREW KETTLE: This is where we add the hops and water to the wort. Think of it as the stock pot you’d make soup in.

THE HEAT EXCHANGER: After we’ve brewed, we send the hot liquid through a heat eachanger on its way to the fermenter.

THE FERMENTER: This is where we add yeast and let it do its thing which results in alcohol and carbon dioxide. The beer is done!

THE FILTER: After fermentation, we may run the beer through a filter to clarify it before it goes to the serving tank.

THE SERVING TANK: The finished beer is ready to serve to the taps at the bar.
